Russian Mushroom and Potato Soup

This is a really tasty soup, just feels like to me that it needs a little bit of meat in it. Like a crumbled bacon that has been sitting in the fridge from yesterday or some shredded corned beef...

Smoked Salmon Frittata

Really tasty, listened to some of the other reviews and melted the cream cheese in the pan before adding the egg mixture. We used a cast iron pan so we could easily just transfer into the oven. It came out really good and has inspired us to make more frittatas...

Easy Skillet Chicken a la King

I really like this recipe but I add a few more veggies and use less milk to make it thicker. So instead of fresh mushrooms, grab a handful of organic frozen veggies that I quickly thaw in the microwave for 45 secs before adding to the sauce. A very quick and easy meal

Thai Pineapple Chicken Curry

Its a good recipe, but can be spiced up a little. I cut the fish sauce in half and don't add the sugar. The pineapple juice works just fine. I use two kaffir leaves (lime leaves) that I buy at the local farmer's market but you can also purchase at asian food stores. Add the leaves to the coconut sauce while the chicken is cooking.

Easy Apple Coleslaw

I made this recipe for our company 4th of July picnic and it was a huge hit. i did change the recipe though, I added crushed pineapple, as many different apples as i could find and shredded carrots. in fact I probably took three different recipes and added them all together. That is the great thing about coleslaw, its so varying. i didn't add any sugar, figured the apples and the pineapple covered that... but I made a huge turkey pan full and it was completely gone by the end of hte picnic...

Fresh Rhubarb Pie

Really good recipe, I made some changes... I cut the sugar and flour in half. I didn't use the butter. I used store bought pie crust and brushed the top with egg. I still put the sugar and flour mix on the bottom to help keep the crusts from getting soggy. The next time I make a rhubarb pie, I think I will cut the sugar and flour mixture down even more. I like a more natural pie...
