About this Cook
I'm a full time graphic designer. A lot of times my creativity spills over into my baking, which most times works. The ones that don't I chalk up as learning experiences. I like to do shaped cakes when I get the time. And I absolutely love inventing recipies!
My favorite things to cook
I love making sweet things, especially cakes, cookies, and candies. Most of my baking is for holidays and parties, I've even been asked to make my shaped cakes for some local organizations. I usually make tons of treats for the family Christmas parties. One year I didn't have time to bake. During the gathering I heard a resounding "She WHAT?! JAMIE!!" from the dining room when my mother informed them I didn't bring any treats. Now every Christmas card I get from them they let me know they expect treats. Sigh ;)
My cooking triumphs
The ultimate favorite family approved recipe is my Brandied Peaches N Cream Cake. My Carmel Apple Pecan cake is also highly favored. My cowokers usually make a mad dash for my Triple Chocolate Marshmallow Brownies.
My cooking tragedies
I've been trying to make a Strawberry N Cream cake. My first two attempts turned out more like soggy bread pudding since I didn't compensate for the amount of moisture fresh strawberries release when cooked. My last attempt was much better, but not quite up to parr.

Apple Crisp II
I made this one weekend for my dad and he has asked me to make it almost every weekend after. We are both very picky about our apple crisp and this recipe was wonderful. I used more than 10 apples because we like more apples. Since we used fresh Orchard apples I left out the water and still had to syphon off some juice after it baked.

Nut Filling for Kolacky Cookies
This is a wonderfully simple nut filling that is very adaptable. I used chopped walnuts and substituted brown sugar for the white suger and used this to fill mini tarts. Delisious!!

Peanut Butter Cake II
This is a great recipe, but make sure to don't bake it too long. I only had a butter recipe chocolate cake mix on hand but other than that I followed the recipe exactly. Very good! I made cupcakes and the first pan I baked too long and they were a little dry. I reduced the time on my second pan and they were perfect.
