White Cheese Sauce

UPDATE 11/2/2010 I am the submitter of this recipe. Since many cooks are having problems with the consistency of this recipe, I am thinking the best way to cook this is with a double boiler. If you do not have a double boiler set a glass bowl on top of a pan of water and bring to a boil; do not let the water touch the bottom of the bowl and above all be patient. The last time I made this for Chicken Enchiladas it was a bit too 'buttery' when I took them out of the oven. So, you might want to cut the butter in half. 12/27/2005 I am adding this addition to my comments above on this recipe to make directions a bit more clear---DO NOT BOIL--DO NOT SIMMER---HEAT VERY GENTLY, STIRRING CONSTANTLY OR WILL NOT BE THE PROPER CONSISTENCY INTENDED--if used as a sauce going into the oven, the bubbling from the oven heat will not cause consistency problems many have had--

Zippy Corn Chowder

Great recipe! The only thing I changed was adding a few roasted green chili peppers instead of the jalapeno, also added 1/2 teaspoon of garlic powder, just because I love garlic.

Deep-Fried Sweet Potato Balls

I made these last Thanksgiving. They are very good. I did mix the brown sugar and coconut in with the sweet potatoes to save time and added pecans, didn't roll in cornstarch, also drizzled lightly with heated maple syrup. Thanks for submitting.

Rice with Herbes de Provence

This went wonderfully with our chicken! Since I used 'Better Than Bouillon', chicken flavored instead of broth I didn't add any salt. Will make this often!

Bacon Ranch Pasta Salad

On step 3 I neglected to instruct to add the pasta with bacon, tomatoes, etc. then toss. My grocery store has since started carrying grape tomatoes, I use them now because the salad will stay even fresher with uncut tomatoes by adding the grape tomatoes whole IF there is any left over.

I've made this recipe many times and I love it. The only change I make is to add 1/2 teaspoon of garlic salt or 1/4 teaspoon of garlic powder if I don't want the additional salt. Thanks for your recipe!

Santa Fe Veggie Quesadillas

Excellent! I also added 1/2 cup of shredded garlic jack cheese, made a mixture of guacamole, sour cream, and salsa, and also served the condiments separate. I just prefer the mixture, but know some people don't like guacamole. If I can't find garlic jack cheese, I just sprinkle lightly with garlic salt. Thanks for the recipe!

Grilled Sea Bass

I really enjoyed this recipe! I left out the sea salt and garlic and replace it with garlic salt mixed in with the melted butter. I wrapped in foil, cooked slowly on the grill, and then finished up the fish directly on the grill, for that 'grilled look'. Place on a plate and poured the butter mixture over top. Very good.

Cheesy Potato Gratin

My family really liked this recipe. I did change a couple of things to suit my taste. I used 1 cup havarti cheese, 1 cup sharp cheddar, and 1 cup Monterey jack, added 1/4 teaspoon garlic powder, 1/4 teaspoon garlic pepper, and sprinkled Parmesan on top. We just like spicy!

Homesteader Cornbread

This was excellent! I add fresh roasted green chili peppers, chopped, to this recipe when I make it for a pot of beans. I also use it as the 'base' for Mexican cornbread. I suggest, use this recipe as is or as a 'basic' and let your imagination loose.

Mini Cheesecakes I

These were really easy and great! The only thing I did different is I used chocolate chip cookie dough, (store bought) for the crust instead of vanilla waffers. Just rolled out the cookie dough about a 4th inch thick, molded into the muffin pan, (sprayed well with Pam), cooked until lightly browned, topped with cream cheese mixture and baked as directed.

Wisconsin Bratwurst

Your recipes are gonna make me fat! My family loves brats this way. I will only cook them like this from now on. I down sized for 5 brats, 1/2 cup butter, 1 beer, but still used 2 huge onions because I saute them and they condense quite a bit. I also added 1 teaspoon of garlic powder and garlic pepper and 1/2 teaspoon of salt. Not real heart healthy, but certainly palate pleasing and hey, life is short anyway, enjoy it! Cook your brats Bob Cody's way!

Baked Scallops

Excellent! I did make a few adjustments to suit my fams taste. Added 1 teaspoon of garlic salt to melted butter plus 1 tablespoon Sauterne wine and 1/4 cup shallots(use 'em or loose 'em thing). Decreased onion and garlic powders to 1/2 teaspoon, omitted garlic cloves, used Panko bread crumbs with Parmesan/Ramano. The first time I made scallops, the kid didn't like them at all, this time he ate all of his and some of mine! Thanks so much for sharing your talent!

Excellent! I used egg roll wrappers instead of flour tortillas, left out bell pepper and added 1/2 teaspoon garlic salt just because I seem to have to have garlic in most everything. Thanks for the recipe! Will make often because my young man and old man insist!
