Baked Scallops

Reviewed: Jul. 28, 2003
Excellent! I did make a few adjustments to suit my fams taste. Added 1 teaspoon of garlic salt to melted butter plus 1 tablespoon Sauterne wine and 1/4 cup shallots(use 'em or loose 'em thing). Decreased onion and garlic powders to 1/2 teaspoon, omitted garlic cloves, used Panko bread crumbs with Parmesan/Ramano. The first time I made scallops, the kid didn't like them at all, this time he ate all of his and some of mine! Thanks so much for sharing your talent!

Pearl Onion Mushroom Bake

Reviewed: Apr. 24, 2010
We really liked this side dish! Will certainly make again and am going to try wine instead of the lemon juice, add a touch of minced garlic, and use a three cheese mix from my deli instead of the cheddar; three cheese mix is Parmesan/Romano/Asiago.

Restaurant-Style Buffalo Chicken Wings

We love this recipe! I was out of cayenne which is a sin in this house so I substituted Chipotle Chili Pepper seasoning. I think I will add 1/2 teaspoon of the Chipotle next time because I like the smokie flavor it added.

World's Best Lasagna

Reviewed: Nov. 4, 2006
This is excellent. I did grate the mozzarella in with the ricotta, added the Parmesan along with another egg, used garlic salt. I just prefer all cheeses mixed together.

Easy Shrimp Dip

Reviewed: Oct. 16, 2006
For me the key here is easy! I made this in addition to other appetizers to munch on during football. Takes like a minute to prepare and is a nice change of pace from my fried goodies.

Rice with Herbes de Provence

Reviewed: Jan. 3, 2007
This went wonderfully with our chicken! Since I used 'Better Than Bouillon', chicken flavored instead of broth I didn't add any salt. Will make this often!

Roasted Garlic

Reviewed: May 13, 2008
I cut the top off, used only one clove, drizzled with about 2 teaspons of olive oil, wrapped in foil and baked 400 for 45 minutes, then turned the oven off and left the garlic in until my red potatoes were ready to 'smash' then smashed the cloves in with the potatoes adding a little butter and half & half. Excellent!

We really liked this recipe. I didn't have dried onion so I minced about a tablespoon of fresh onion and it turned out great!

Great Grandpa's Garlic Pickles

Reviewed: Nov. 11, 2006
I have been making a very similar recipe to this for years. I don't care much for dill so I use sour pickles that I have to buy from Best Maid over the 'net' because they are hard to come by where I live. I do use minced garlic then let them set for a week stirring once a day, then again, I make a greater volume than this using a 5 lb bag of sugar so it takes some time to get all the sugar desolved. Try chopping some of these pickles into a relish and add to deviled eggs, tuna salad, chicken salad, etc. We love using these pickles every chance we get! Even adds a nice touch to a big ole juicy brat.

Mini Cheesecakes I

Reviewed: Dec. 16, 2006
These were really easy and great! The only thing I did different is I used chocolate chip cookie dough, (store bought) for the crust instead of vanilla waffers. Just rolled out the cookie dough about a 4th inch thick, molded into the muffin pan, (sprayed well with Pam), cooked until lightly browned, topped with cream cheese mixture and baked as directed.

This is very good even though the consistency was a little thick for me. I added a little whipped cream to lighten it up and was still very tasty!

Green Eggs and Ham Breakfast Sandwich

I put this concoction in a flour tortilla, rolled up like a Chimichangas and grilled it on the griddle to melt the cheese. It was so good. Hubby dipped his in salsa.

The cottage cheese really gave these muffins a wonderful moist texture! Although next time I think I will omit the thyme but we really enjoyed this recipe!
