Sausage and Mushroom Calzones

Stuffed Green Peppers

First, I read the reviews and please do not fry the ground beef first---would you fry ground beef before assembling a meatloaf—no. We enjoyed this but think the sauce could use a touch of brown sugar and a bit of minced garlic.

Asparagus and Cashews

There was just too much oil for us. I am going to try again using 1/2 the amount of oils called for and maybe a pat of butter and near the end of cooking I will add a bit of minced garlic.

These were good but next time I will 'kick' it up a little leaving out the regular salt, using more than a pinch of garlic salt and sprinkle the tops with Asiago cheese.

Capers and Halibut

The capers coupled with the wine was just too much acidity for us. Will try again without capers and reduce the wine to about two tablespoons adding some toasted almonds for texture.

Cheesy Potato Salad

This was OK but the addition of sugar was not really for us; will stick with my garlic based potato salad with bacon I cook myself because the bacon pieces are just too small to really enjoy the taste of bacon.

Cajun Baked Catfish

Was a little salty for our taste; will make again using 1 teaspoon of garlic salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon of lemon pepper to replace the 1/4 teaspoon of cracked black. I always feel once a dinner gets to the plate is better to add salt than be too salty because it is such a simple 'fix'.

Grandma's Onion Rings (Southern Style)

I tasted from the first batch and these were quite bland for our taste so added 1 tablespoon, yes, tablespoon of Cajun seasoning to the flour and it made a world of difference. Drain on a rack with paper towel beneath for a crispier end result.

Summer Chicken Burgers

I knew the chicken would need more than salt and pepper so I seasoned with Greek seasoning and a little garlic powder. Next time will use melted butter on the buns instead of using mayo as the sautéed onions made the sandwich quite slippery.

Mom's Big Burgers

I am glad I cooked a little 'tester burger' first before adding the water as the water addition just didn't make sense to me. I could only taste the onion soup mix and hot sauce. This was just too much like a meatloaf sandwich.

Italian Sausage Soup with Tortellini

I soaked up as much drippings as I could with a paper towel before adding the beef broth, etc. because it is much quicker than skimming the top. We thought this was pretty good as written but just needed something more for our taste. I ended up adding a good amount of Italian seasoning, a bit of fennel seed, and a can of Rotel tomatoes. The green chili in the Rotel was a nice addition. As I stated a pretty good recipe as written, we just prefer stronger flavor.
