Awesome Baked Sea Scallops

We really liked this dish but think next time I will leave out the nutmeg and add about 1/2 cup of 3 cheese deli mix to the bread crumbs.

Alaskan BBQ Salmon

This was just a bit sweet for us. I will try again with 1/2 the amounts of brown sugar and honey, replace the apple cider vinegar with soy sauce. The recipe as is does need salt added for our taste but if I use soy sauce it will probably provide enough salt in itself.

Cheese and Bacon Potato Rounds

When I am not ambitious enough to scoop out a bunch of potatoes I will make these to cure my potato skin fix. Like many reviewers I sprinkled the potatoes with a bit of garlic salt; served with a side of sour cream--

Nacho Cheese Sauce

We thought this was a good nacho sauce. I will make again but only for nachos as is intended. Many reviewers complained of a flour taste--be sure to cook your flour and butter mixture (roux) at least 2 - 3 minutes while stirring constantly; this will cook out the flour taste.

We were not huge fans of this recipe as written. I will 'play' with the idea starting with using fresh mushrooms with minced garlic and add a couple tablespoons of white wine.

We thought these were OK but not voted on to make again. I did get a cute idea from this recipe though; going to turn my muffin tin upside down, mold the biscuits around the cups; bake until brown then fill with sausage gravy to serve with breakfast.

Chili Dip

This was a good dip but next time I will work a little harder at getting most all the liquid out of the tomatoes and chilis so it will be thicker; will squeeze in a paper towel and also think I will add a well drained and rinsed can of black beans.

Cheesy Acorn Squash

We enjoyed this for a change of side dishes. Next time I will mix different cheeses in with the stuffing and also think this needs minced garlic; a fun recipe to experiment with!

Bacon and Tomato Cups

These were good but too much dough as written. Next time I will quarter the biscuits or use crescent roll dough, use only a couple tablespoons of mayo and add a bit of Asiago cheese along with the Swiss; very nice recipe with endless possibilities.

Garlic Mashed Potatoes

Followed the recipe as written and the garlic taste is quite faint. I might follow the suggestions of cooking the garlic with the potatoes but I just don't think it will beat the great taste of roasted garlic in potatoes.

Onion Rings

I cooked one to taste before cooking them all. It was a bit too 'bready' for us and a bit bland so thinned the batter a little more and added my favorite Cajun seasoning and they were better suited for our taste. Some reviewers stated they were greasy---make sure your oil gets no lower than 350 degrees. I usually start frying with an oil temp. of 360 degrees because the temp. will drop when adding what ever you are frying. Be sure to not over crowd. I always drain my fried food on a 'cookie cooling rack' with paper towel beneath supported by a cookie sheet pan; this keeps fried food crispy all around.

Stuffed Peppers My Way

This was a nice side dish to go with our grilled chicken. I do think when I make this again I will cook the rice in chicken broth, omit the salt and to the skillet will add minced garlic and try a can of drained Rotel tomatoes leaving out the fresh tomato, also will try different cheeses. A fun recipe to play around with!

Chicken and Dumplings IV

After making this I just did not 'get' all the rave reviews. I read many of the reviews again and realized most ratings were based on additions the reviewer made---this was so bland as written and with all the additions I ended up with it became a totally different recipe. In short, added chicken bouillon, poultry seasoning, minced garlic, Cavender's Greek seasoning, 2 cans of Cream of chicken soup and with these additions it saved my meal. I thought I would save time with this dumpling recipe but will stick with my rolled dumplings; the difference in taste and texture of the rolled dumplings is just so worth the extra time.

Easy Grilled Chicken Teriyaki

If I make this again I will use white wine instead of lemon juice plus add a little molasses and brown sugar. I just think a touch of sweet would make this recipe come alive.

Tasty Green Beans

This was not our favorite but was OK. I don't think I will make this again but if I do I will use only 1/4 cup of lite soy and low sodium beef bouillon adding no additional salt but lots of cracked black.
