Crab Canapes

Southern Style Chicken and Dumplings

We did not like this recipe and by the time I added other ingredients to get it better suiting our taste it became a whole other recipe--I always have used butter instead of shortening making dumplings because it adds much more flavor as well as using broth instead of water and much more than 1/4 cup.

Chicken Noodle Soup

I made this recipe as written and it was quite bland for our taste so I 'equaled’ the bouillon vs. water using 12 teaspoons of ‘Better Than Bouillon’ paste bouillon which is the best bouillon flavoring I have found. I also added a couple teaspoons of minced garlic and let it simmer another 30 minutes. Still needed something so added a teaspoon of Cavender’s Greek Seasoning and with these additions it better suit our taste buds.

Brandied Candied Sweet Potatoes

I ended up adding about 1/4 cup more brown sugar and a handful of walnuts; baked at 350 degrees for 30 minutes and added mini marshmallows, returned to oven to 'tan' the mallows. Very good and we did not think the brandy was over whelming.

We thought this was pretty good and quite different. For my family's taste the poultry seasoning was a little over powering so will just omit it next time. A fun variation to garlic bread!

Red Garlic Mashed Potatoes

This was different and I am glad I tried them but we did not like the addition of sugar. I seldom peel potatoes of any kind so didn't with this recipe. We had quite a bit left over and I didn't want it all to go to waste so the next evening I added a bit of sour cream, green onions and shredded sharp cheddar cheese; formed into patties, coated with panko bread crumbs and pan fried them. Obviously less sugar taste and turned out pretty good and I was proud to not have wasted.

Homestyle Turkey, the Michigander Way

I used a lot more than 6 tablespoons of butter. I also mixed melted butter seasoned with Cavender's Greek seasoning and injected into the breast in many areas trying to be sure I didn't miss any spots. I slathered the entire bird with butter, poured the bouillon in the bottom of the pan, left the foil off, didn't baste, cooked at 325 degrees for 15 minutes per pound. When the timer went off it was the perfect 180 degrees with super moist breast and beautifully golden.

Candied Sweet Potatoes

This is an excellent recipe but I just didn't want to add spices because I didn't want it to taste like my sweet potato pie. I omitted the cinnamon and nutmeg, added 1/4 teaspoon of salt, removed from heat, added a teaspoon of vanilla and a couple small handfulls of walnuts. I left all the potatoes in chunks as well, the walnuts were chunky which added a really great texture.

Crispy Herb Baked Chicken

This was a bit too salty for our taste and would like it to be a bit more crisp. Will try again using 1/2 teaspoon of granulated garlic instead of the garlic salt and will cook on a cookie cooling rack on top of a cookie sheet pan to try to get a crispier coating.

Cowboy Mashed Potatoes

I cut the carrots in thirds so they would cook in about the same time as the cubed potatoes and they were done along with the potatoes. I also minced the garlic so the taste would distribute more evenly. Ended up adding about twice the amount of cheese. This was OK but probably will not make again but if I do, I will leave out the carrots.

Chicken Tortilla Soup V

This was a bit bland for our taste; I ended up adding more cumin and about a full tablespoon of chili powder. I was low on salsa so I added a can of Rotel tomatoes. I fried some flour tortilla strips, salted them and crumbled on top of the soup which gave a nice crunch.

Fried Chicken with Creamy Gravy

This was very good; the only thing I did different was to add 1/2 teaspoon of cayenne pepper to the flour mixture. The gravy was very good but my family does prefer the 'all milk' gravy. I read many reviews that said their chicken was greasy; it won't be if you make sure your oil is hot enough, use a thermometer to regulate the oil temp. as the flour will immediately soak up grease that is not hot enough. I never drain anything fried directly on paper towel; I place a cookie cooling rack on top of the paper towel because the paper towel seems to make the bottom of what ever you fry a bit greasy.

Maryland Crab Cakes II

These were very bland and I was very glad that I fried a little 'taster patty’ before I formed them all and broiled them. My additions, such as green onion, minced garlic, Blackening seasoning, etc., probably kept this from being a true Maryland crab cake but if so, I am not so keen on authentic Maryland crab cakes.

Country Sausage Gravy

I had to try this recipe because I always just cook my sausage then add a little butter, flour, and milk as needed and thought this would be a nice 'venture', as it was, but overall I do prefer my less complex taste. I will probably make this again with less red pepper, omit the sage and thyme and use only one bouillon cube.

Salmon Cakes II

These just did not wow us. I did use leftover salmon. If I make these again I would use green onion, less breadcrumbs, less Worcestershire, add garlic, and coat with Panko breadcrumbs instead of flour.

Grilled Marinated Salmon

This was just OK for our taste. I just dumped all the ingredients in a ziploc and by forcing all the air out it will marinade both sides at the same time. I am going to try this again and replace the rice wine vinegar with my favorite white wine and also replace the sugar with 1 tablespoon of molasses.

This was just too bland for our taste. I cut the recipe in half and still had a ton left. Think I will stick with my mixture of yogurt, cucumber, and dry Zesty Italian dressing mix.
