Cucumber Sandwiches II

These were good but next time I will try using mayo instead of sour cream, Zesty Italian mix, and English cucumber.

Chicken Pot Pie II

We enjoyed this recipe. I did substitute Cavender's Greek seasoning in place of the salt, think I will increase the Cavender's to 1/2 heaping teaspoon next time. Used puff pastry, cut in strips then made into a lattice.

Chicken Tortilla Soup I

This was good but not spicy enough for us. I will omit the water next time and if I need more 'juice' I will use more chicken broth. I did add a can of Rotel tomatoes, didn't have hominy so added a can of Garbanzo beans which worked out really nice.

The Best Unbaked Cherry Cheesecake Ever

I used a sugar cookie dough, (store bought) for the crust. Just spread 1/2 of a small roll of the dough into a sprayed 8" pie plate and cooked for 12 minutes. I doubled the recipe, didn't have heavy cream so used cool whip and less powdered sugar. Turned out really nice!!

Lasagna Roll-Ups

This was easy for a week night dinner. We liked it pretty good but next time I will double the cheese mixture using a ricotta instead of cottage cheese, add some garlic powder and use a 3 or 4 cheese mix containing Romano cheese.

Quick and Easy Alfredo Sauce

This is quick and easy for sure but when I make this again I will start with a little less butter, milk, and garlic powder. I very much like the idea of the cream cheese and to be honest, if I had not made this myself I would not have guessed it contained cream cheese.

Big Al's K.C. Bar-B-Q Sauce

We loved this sauce! I didn't have any tomato sauce so I pureed a can of diced tomatoes which I am sure would have made it a bit thinner sauce if I hadn't cooked it in my little slow cooker for about 6 hours and 'cocking' the lid the last 2 hours. Had a wonderful consistency. I thought the red wine vinegar was going to be over powering because when I stuck my head over the sauce to smell, the vinegar choked me and made me cough---LOL! It was not over powering to eat at all, just don't take a close up big sniff! Thank you so much for this recipe!!

Summer Squash Casserole

We didn't get too excited about this recipe. I am going to try this again; mix the cheese in with the mushroom soup, and instead of croutons I am going to top with a mixture of stove top stuffing tossed with butter, leaving uncovered so the 'topping' will crisp up nicely. Will probably only cook for about 40 minutes.

King Crab Appetizers

We thought these were very good. After combining all but the crab, family tasted the mixture and all agreed it needed that bit of something else for more flavor so I added 1/2 teaspoon of garlic salt and 1/2 teaspoon of Cajun Blackening seasoning. I will add a little more Cajun next time. I did use Fillo as suggested by many. Very good!

Chili Dog Casserole II

We thought these were very good, also quite filling! I put a piece of pepper jack cheese in the tortillas, broke it in half so it would go end to end. I then topped with 'French's' French Fried Onions. Great Saturday night meal when you don't feel like going out or tired of 'pick-up'!

Cream of Mushroom Soup

This was very tasty! I used green onions, used garlic salt instead of regular salt, and pureed about 1/2 of the soup once it was done. I don't usually cook on Friday evenings but this was so easy and quick that I am glad I cooked! Great with a grilled cheese sandwich!

Country Fried Squash

This really does need to be double dipped. After frying one and tasting I added a lot more garlic salt and a bit of Blackening Seasoning, was much better. I did cut thin slices. These are good also dipped in Ranch dressing.

This was very good but I knew 1/4 cup of cheese would not be enough for our taste so I added 1/2 cup to the egg mixture and also used 1/2 cup on top.

Asparagus Wrap

I used fresh asparagus, blanched, used about half of the blue cheese called for and wrapped in three sheets of phyllo dough, lightly brushing with butter between each layer then cut to 'fit' with a pizza cutter. Cooked them at 375 for 15 minutes. Quite good!!

Easy Snack Wraps

After reading the reviews I changed a few things. I didn't have flavored cream cheese so I softened the cream cheese I had adding fresh chives, hydrated sun dried tomatoes, and grated sharp cheddar cheese, sprinkled in a little garlic salt and mixted all together with the cream cheese. This method really gave a lot of flavor to the wrap and they were not messy to roll or to eat. Very refreshing on a hot day! Will also be making these for football snacks!

Angel Chicken Pasta
