Tomato Pie I

Reviewed: Aug. 5, 2011
We enjoyed it -- I pre-baked the crust and squeezed diced fresh tomatos to get rid of extra liquid -- and happily ate the leftovers!

Orzo with Parmesan and Basil

Reviewed: Jun. 9, 2011
We've made this several times now and really enjoy it. I haven't had fresh basil yet, so I add 1 T. dried to the broth, and it's delicious! Sometimes we also throw in a little wilted spinach--very good!

Broiled Tilapia Parmesan

Reviewed: Feb. 24, 2011
Wow! A delicious and different way to prepare Tilapia. We loved the creamy Parmesan topping!

World's Best Lasagna

Reviewed: Feb. 1, 2011
This is our go-to lasagna recipe. I use the advice of other reviewers and don't pre-cook the noodles (just soak them in hot water for 20 minutes).

Mom's Shredded Elk Sandwiches

Reviewed: Feb. 1, 2011
We used venison back strap and it turned out delicious! No "gamey" taste at all!

Scrumptious Salisbury Steak in Mushroom Gravy

Reviewed: Jan. 26, 2011
We thought this was pretty good, though a little bland. It might be because I used fresh instead of canned mushrooms, though. I'd suggest additional pepper and only 2 1/2 cups of milk. I liked that it avoided canned cream soups!!!

Quinoa Side Dish

Reviewed: Jan. 19, 2011
My second quinoa experience, and this turned out very good! I didn't have fresh parsley or thyme, so I used dried (1/3 of the amount). I didn't add the salt, either, because my broth was salty enough.

Black Magic Cake

Reviewed: Dec. 18, 2010
This was great! I even (accidentally) over-baked it and it was still moist. This recipe is a keeper!

Crazy Dipped Pretzel Rods

Reviewed: Dec. 15, 2010
These are great! The quantities are right, too. I don't like it when there's a TON of sauce/dip/spread left over. You really do have to refrigerate them to set, though. I tried on the counter and they never hardened.

Amish Breakfast Casserole

Reviewed: Dec. 14, 2010
My husband loves this casserole. I make it twice a month for his breakfasts. We prefer it with sausage, but have enjoyed it with bacon, too. I always add two more eggs and a few spices.

Beef-Stuffed Squash

Reviewed: Dec. 14, 2010
We didn't enjoy this. We thought the glaze was too sweet, and it tasted just like meatloaf cooked inside squash.

Golden Crescent Rolls

Reviewed: Nov. 15, 2010
We loved this! They were soft, buttery rolls, and my husband really enjoyed them with strawberry jam. The only changes I made were to sub 1/2 of the flour for whole wheat & mix the dough in my bread machine.

Creamy Au Gratin Potatoes

Reviewed: Oct. 18, 2010
We liked it a lot, but I didn't want to give it five stars because I made a few changes. I omitted the onion and sauteed a clove of garlic in the butter when making the sauce. I made it in a 1.5 qt. dish, but next time will make it in a bigger one (9x9 pan)--we like it thinner and browned on top.
