Tomato Pie I
We enjoyed it -- I pre-baked the crust and squeezed diced fresh tomatos to get rid of extra liquid -- and happily ate the leftovers!

Orzo with Parmesan and Basil
We've made this several times now and really enjoy it. I haven't had fresh basil yet, so I add 1 T. dried to the broth, and it's delicious! Sometimes we also throw in a little wilted spinach--very good!

Broiled Tilapia Parmesan
Wow! A delicious and different way to prepare Tilapia. We loved the creamy Parmesan topping!
