Lana's Sweet and Sour Meatballs

Reviewed: May 6, 2015
Lana, your recipe is excellent. It's very easy to make. And it tastes great. The sauce is PERFECT.It's the best sweet and sour sauce I have ever had. Thanks so much for submitting your recipe. I used a small cookie ball scoop to measure my meatballs. Baking them on a sheet tray in the oven was a great idea because so much of the fat renders out. I'm never going to fry meatballs in a pan again. I'm sure this is NOT a low calorie recipe but eliminating some of the fat is a great idea. I prefer home made to store bought. Your sauce is a great one. I will never buy another bottled sweet and sour sauce. By the way, I followed your recipe exactly.

Zucchini Crustless Quiche

Reviewed: Mar. 6, 2015
I thought this was very good. I made slight changes. I did not use a food processor at all. I used a standard box grater to shred the zucchini. I used two. I omitted the feta cheese because I didn't have any. I only used a half cup of flour because other reviewers had mentioned a floury taste. I also chopped up a few slices of deli ham and threw that in. I omitted the salt. I think this quiche would be very enjoyable at any time of day. I'm always looking for ways to add more vegetables and less meat to our diet. And I think this recipe is a big improvement over the standard "bacon and egg breakfast". I was very happy with this recipe. I think it's very easy to add what you may have on hand. It would also be great for brunch. Or, maybe bake this is a muffin pan for good grab and go breakfasts. It was easy to make, and easy on the budget. By the way, it browns nicely. Very presentable! Thanks so much for the recipe.

Homemade Chocolate Walnut Brownies

Reviewed: Feb. 1, 2015
I've had brownies on my mind for a few days and was looking for a new recipe. This is an outstanding brownie recipe. I also baked mine in a 9"x13" glass baking dish for 30 minutes. I used salted butter. The batter was really thick and I was afraid they were going to be dry. But, they were PERFECT. Best brownies ever!

Salisbury Steak with Mushrooms

Reviewed: Jan. 30, 2015
Excellent recipe. I was looking for a recipe that did not use canned cream of mushroom or cream of chicken soup. So, I was really happy to find this recipe. It basically uses ingredients that you probably have at home. I didn't have any bread crumbs so I used saltine crackers instead. I did not add the teaspoon of salt to the meat. I just lightly salted with a salt shaker. Otherwise, I followed the directions pretty closely. And the directions are great. Thanks so much for sharing your recipe with us. This will be my "Forever Salisbury Steak" recipe.

Easy Vegetable Beef Soup

Reviewed: Jan. 8, 2015
I really liked this recipe. It is so easy to make and the results are very good. I followed the directions very closely. I felt like the soup was a little greasy even though I tried to skim off as much fat as possible. I thought it was going to be too bland but after I let it simmer for a while, it cooked down a bit, and the beef flavor became more concentrated. I did use beef bouillon but I think next time I make this I'll use a combination of beef stock and a tomato juice like V8. This recipe makes a lot of soup. I liked this much better than buying a canned soup. Thanks for a very good, easy, satisfying recipe.

Slow Cooker Ham

Reviewed: Dec. 31, 2014
This recipe is easy and results are excellent. I want to thank Littlemstxthang for the wonderful recipe. I read MANY of the reviews and don't understand why many cooks had so many problems. Here's what I did. I bought a regular bone in ham at the market. Mine was a 6.5 pound, Cook's brand, shank, smoked ham. I followed the recipe pretty closely, but I was afraid that the brown sugar in the bottom of the pan would burn. I added about a half cup of pineapple juice on the bottom. I put the ham in cut side down. My ham fit perfectly in my slow cooker. I put the lid on and turned it on low. In my Crock Pot, the low setting allows me to choose either 6 hours or 8 hours. I don't really trust the slow cooker so I don't leave home while it's on. I cooked my ham for about 5 hours. And I basted it periodically. It made lots of juice while it cooked. It turned out tender and tasty. I love the idea that you can make a ham without using the oven. So, it worked out well for me even though I never left home. I will certainly make my hams this way in the future. I was very happy with it. Thanks also to all of the reviewers as I picked up lots of good tips from you.

The Ultimate Pasta Salad

Reviewed: Dec. 3, 2014
Thanks Helene. This is an excellent pasta salad. I especially liked the addition of fresh broccoli and cauliflower. That adds a nice crunch to the salad as well as some very healthy vegetables. Also, thanks for your follow up note. I also found that the next day the oil and vinegar dressing seemed to disappear. All I did was add a little more red wine vinegar. I do like a vinegar taste in the salad. This recipe makes a huge amount so it's great if you're serving a crowd and it's also nice to have some leftovers for lunches during the week. Also, so easy to put this together.

Traditional Three Bean Salad

Reviewed: Oct. 29, 2014
I think this salad is excellent. It's simple to prepare. I prefer making my own salads at home instead of purchasing the pre-made ones at the grocery deli counter. Thanks for sharing this recipe. I usually try to follow the directions exactly. I didn't have any jars of pimento peppers at home so I omitted that ingredient.

Chinese Restaurant Almond Cookies

Reviewed: Oct. 11, 2014
Excellent cookie! Very easy to make. I followed the suggestions of several reviewers to use half butter and half butter flavored Crisco and was happy with the results. My cookies were a little crumbly - not sure why. I also added 3 teaspoons of almond extract. I'm glad that I did. I do appreciate the comments of the reviewers who suggested these tweaks.

One Egg Lemon Pound Cake

Reviewed: Sep. 13, 2014
I agree with many others that the preparation for this cake batter is a little odd. But, I followed the directions carefully and am delighted with the result. I used a pastry blender to cut the butter into the flour and sugar mixture until the texture was like coarse crumbs. I did not have any lemon extract. I added the zest from one lemon to the dry ingredients. And I used another reviewer's suggestion of adding two Tablespoons of Limoncello to the wet ingredients. I baked my poundcake in a decorative, small bundt pan. It produced an adorable, tender cake that looked like it came straight from the bakery. I will keep this recipe handy for whenever I need a quick cake and don't have time to soften the butter. I love the recipe and thank Kimberely for sharing it. It was so easy to prepare. My baking time was about 50 minutes.

Simple Macaroni and Cheese

Reviewed: Aug. 7, 2014
I was starving and discovered that I had just enough milk, cheddar cheese, butter, and elbow macaroni at home. So, I thought I should be able to make a quick mac and cheese. I found this recipe and was delighted that it was so easy and I thought the result was great. It hit the spot!

Todd's Famous Blueberry Pancakes

Reviewed: May 26, 2014
I enjoyed the pancake. I would call this a hearty pancake. It does puff up very high in the pan. I thought the batter was too thick so I added a little more milk so that it would be pourable. Using a 1/4 cup measure produces a pancake with a 5 inch diameter. The flavor is good. I used fresh blueberries because that's what I had at home. I just sprinkled a few onto each pancake as they cooked. I would make this recipe again. It's certainly way better than any packaged mixes. And of course, you won't miss the chemicals and preservatives. Fresh and homemade is always best.

Four Egg Yellow Cake

Reviewed: Apr. 27, 2014
This is a truly excellent cake, if you like yellow cake. I only use box cake mixes as a last resort. I followed the directions on this recipe exactly and got beautiful results. It is not overly sweet. I agree with another reviewer, that it is great to eat without frosting. This will be my only yellow cake mix forever. I was extremely impressed with the results even though I don't really like using shortening in a cake batter.

Spring Vegetable Soup

Reviewed: Apr. 9, 2014
Very easy to make. And great if you want to clean out your vegetable drawer. I would suggest preparing all of your vegetables the day before you plan to make the soup. As another reviewer suggested, you really don't need noodles, potatoes, and beans. I used one can of white kidney beans. If you enjoy soup, and want to add lots of vegetables to your diet, this is a great recipe.

Yummy Lemon Coconut Loaf

Reviewed: Mar. 23, 2014
Don't miss this recipe. If you enjoy the flavor of lemon and coconut, you will love this. I followed the recipe closely but used skim milk instead of whole milk. I usually do not buy whole milk anymore. The other thing I did was a bit of a mistake. I buttered my baking dish instead of using baking spray. The bottom of my loaf browned a little more than I would like. This is a wonderful recipe!

Best Cream Of Broccoli Soup

Reviewed: Mar. 10, 2014
I just made this soup. It is outstanding. I followed the recipe closely but not exactly. I used skim milk as that is the only milk I buy now. I used fresh broccoli including most of the stalks. I just cooked the broccoli a little longer to soften the tougher parts. I cut off the really fibrous thick ends. I will never buy another can of commercially made cream of broccoli soup. This was very easy to make, inexpensive, and contains great nutrients. Thanks go to Jessie and to all who made the recipe, reviewed it, and gave their suggestions.

Baked Denver Omelet

Reviewed: Mar. 9, 2014
This is excellent for breakfast or brunch or any time you want a light meal. I baked mine in a nine inch square, glass baking dish. I like that it can be easily cut into 9 squares. Based on what others have written, it seems easy to add in the vegetables or leftover items or other additions that you like. I did not add any extra salt. I used ham in mine. And the ham was already salty enough. Also, I think this would make a perfect breakfast sandwich and be much better than what you can get from a fast food place. Save your money, save your time, and know what is really in your meal!

Healthier Potato and Cauliflower Soup

Reviewed: Mar. 1, 2014
I like this recipe a lot. It was easy to prepare and it's very tasty. I added a little bit crushed red pepper to mine for a little kick. I thought this was a little garlicky for my taste. So, next time I will use a little less garlic. I'm really wondering about the calorie count. If it's accurate, this is very good and nutritious for those of us who are trying to watch our daily calorie count.

Cream of Chicken Breasts

Reviewed: Feb. 23, 2014
I made this tonight. I had a pound of boneless chicken breast, and a can of cream of broccoli soup. I added a can of milk, a half cup of rice, a half cup of water, and a half cup of shredded cheddar. I baked it for an hour. It was a nice, warm, comforting casserole. I also sliced up two carrots and threw them in. It's a very flexible recipe. Use any canned soup that you like and use any vegetables that you have on hand. Add seasoning to your taste.
