Spring Vegetable Soup

Very easy to make. And great if you want to clean out your vegetable drawer. I would suggest preparing all of your vegetables the day before you plan to make the soup. As another reviewer suggested, you really don't need noodles, potatoes, and beans. I used one can of white kidney beans. If you enjoy soup, and want to add lots of vegetables to your diet, this is a great recipe.

Yummy Lemon Coconut Loaf

Don't miss this recipe. If you enjoy the flavor of lemon and coconut, you will love this. I followed the recipe closely but used skim milk instead of whole milk. I usually do not buy whole milk anymore. The other thing I did was a bit of a mistake. I buttered my baking dish instead of using baking spray. The bottom of my loaf browned a little more than I would like. This is a wonderful recipe!

Best Cream Of Broccoli Soup

I just made this soup. It is outstanding. I followed the recipe closely but not exactly. I used skim milk as that is the only milk I buy now. I used fresh broccoli including most of the stalks. I just cooked the broccoli a little longer to soften the tougher parts. I cut off the really fibrous thick ends. I will never buy another can of commercially made cream of broccoli soup. This was very easy to make, inexpensive, and contains great nutrients. Thanks go to Jessie and to all who made the recipe, reviewed it, and gave their suggestions.

Baked Denver Omelet

This is excellent for breakfast or brunch or any time you want a light meal. I baked mine in a nine inch square, glass baking dish. I like that it can be easily cut into 9 squares. Based on what others have written, it seems easy to add in the vegetables or leftover items or other additions that you like. I did not add any extra salt. I used ham in mine. And the ham was already salty enough. Also, I think this would make a perfect breakfast sandwich and be much better than what you can get from a fast food place. Save your money, save your time, and know what is really in your meal!

Healthier Potato and Cauliflower Soup

I like this recipe a lot. It was easy to prepare and it's very tasty. I added a little bit crushed red pepper to mine for a little kick. I thought this was a little garlicky for my taste. So, next time I will use a little less garlic. I'm really wondering about the calorie count. If it's accurate, this is very good and nutritious for those of us who are trying to watch our daily calorie count.

Cream of Chicken Breasts

I made this tonight. I had a pound of boneless chicken breast, and a can of cream of broccoli soup. I added a can of milk, a half cup of rice, a half cup of water, and a half cup of shredded cheddar. I baked it for an hour. It was a nice, warm, comforting casserole. I also sliced up two carrots and threw them in. It's a very flexible recipe. Use any canned soup that you like and use any vegetables that you have on hand. Add seasoning to your taste.

Ranch Dressing II

Thanks for an excellent recipe. Like many other home cooks, I am increasingly reluctant to buy commercially prepared, shelf stable products because of the use of chemicals and preservatives. I'm even beginning to experiment with making my own mayo. This ranch recipe is tasty and is so easy to prepare.

Cream Cheesy Cubed Zucchini with Lemon and Oregano

I think this is an excellent recipe as I am always looking for ways to eat more vegetables and for easy ways to cook them. This is a very quick side dish and I think it would be good to accompany many kinds of dishes including an omelette, or chicken breast, or as an addition to a canned or dry soup. Very versatile. As others suggested, I also love the idea of trying it with a little parmesan cheese. Thank you for this quick and healthy recipe.

Grandmother's Buttermilk Cornbread

This recipe was so easy to prepare and it turned out great. I did not have any buttermilk on hand so I substituted one cup of 2% milk and added one Tablespoon of vinegar. I let that stand while I measured the other ingredients. Many reviewers have mentioned that sugar should not be added to "real" cornbread. I thought this had a nice sweetness. I did not add honey or butter when I ate it. I did not think this was overly sweet. I'm happy that I tried the recipe. And I thank Bethany for sharing her grandmother's recipe.

Greek Style Garlic Chicken Breast

I would have followed the recipe exactly but 1 cup of olive oil seemed like a lot to me. Many other reviewers also suggested reducing the oil to a half cup. The only other change I made was to use the zest of the lemon that I juiced. I marinated the chicken breast for a few hours and then baked it in the oven. It smelled great while it was baking. It got done very quickly. The chicken breast was moist and flavorful. Thanks for an excellent recipe. It was very good, easy to prepare, nutritious and healthy.

Cranberry Chutney I

I think this recipe has too much vinegar. I made it as directed. It's probably not fair to compare this to a typical cranberry sauce which is often very sweet. I like the suggestion of one cook who thought that using orange juice instead of water would be a good idea. I think I'll like this better on a turkey sandwich. So, I'm going to keep an open mind about it and probably cut back on the vinegar next time I make it. The spices are very nice. I would not change them at all.

Downeast Maine Pumpkin Bread

I made this Pumpkin Bread today. One thing I love about the recipe is that it uses the entire 15 ounce can of pumpkin. I made mine in one loaf pan, one small bundt style pan, and 9 medium muffins. The recipe has a wonderful flavor. The only change I made was to add a cup of chopped walnuts. It is excellent.

Sweet Cornbread Cake

This is best cornbread I have ever eaten. I followed the directions closely. I didn't have any vegetable oil but used an extra virgin olive oil. I thought I was taking a chance with that but it worked out very well. I also buttered my baking dish. The crust turned out a very appetizing, slightly crispy golden brown. I will never buy a corn meal mix again. This recipe could not be easier and the results are terrific. And, it makes a big batch. Thanks so much for sharing this recipe.

Dawn's Meatloaf

This meatloaf was quick to put together. I had all of the ingredients in the pantry. It turned out moist but I think it's bland. I think it needs more seasoning. I will try making it again with more fresh vegetables in it and some parsley and maybe some onion soup mix.

Brown Sugar Banana Bread

I made this banana bread today. It turned out very well. I followed the recipe very closely. The only thing I added was 1 cup of chopped walnuts. I also baked mine in a muffin tin. The muffins were done in about 30 minutes. Since bananas vary in size, I used 4 ripe bananas. I mashed mine with a fork just as I usually do. I measured them. I had just a little over one cup. The flavor is excellent. The muffins are very tender. This is now my favorite banana bread recipe.

Easy Weeknight Chicken Parmesan

Taffy Apple Salad I

This is simple to put together. I made it as instructed. I think it is awfully sweet. Next time I make this I will use half the sugar. I just think it's a little too sweet. It's a nice addition to a buffet, especially when you are short on time.

Cornbread Muffins I

I love cornbread and corn bread muffins. I am delighted with this recipe. Mine made 12 full size, delicious muffins. Please note that I omitted the canned corn as I didn't have any at home. Also, I baked mine for 20 minutes and they were slightly overdone. So, I suggest that you keep an eye on yours and possibly start checking them at about 15 minutes. I will never use a package mix again. These were easy to make and turned out great. Thanks for the excellent recipe.

Lemon Poppy Seed Muffins I

I agree with most other reviewers that these muffins do not have enough lemon flavor as the recipe is currently written. The next time I make them, I will add at least a Tablespoon of fresh lemon to the batter and possibly use both the zest and juice of two lemons. I only used 1/2 cup of sugar in mine as I'm trying to reduce my use of sugar in general. I do love the way they baked. Mine popped right up in the muffin pan and were lightly browned after about 14 minutes.

Kim's Macaroni Salad

I gave this 5 stars because I think it's a great basic recipe that cooks can easily modify with whatever they have on hand. I used rotini pasta because that's what I had on hand and wanted to use it up. I used only 1/2 teaspoon of salt, added two finely shredded carrots, and minced half of a red pepper. My version looks very pretty. The taste is mild as I did not add any jalapeño peppers. I would also like to add canned tuna to this or canned salmon. I think it's a very good, basic recipe.
