Bacon Cheese Frittata

Overall, this wasn't bad. It was something different to try, which is what I was going for. I made it a little more "figure friendly." I substituted turkey bacon for the real stuff and I cut down on the butter and cheese. Like a lot of the other recipes I've tried recently, it gives me a base to work off of and play around with it.

Garlic Mashed Red Potatoes

I tried doing this recipe as written but it wasn't suited to my taste. I ended up doubling the amount of milk, added pepper & garlic powder. I will say that I appreciate recipes like this one because gives me a starting point to an idea I have and I tweak it to my liking.

Baked Chicken Wings

I loved that it was moist & fall off the bone but it didn't have much flavor in my opinion. I may try it again with a couple of tweaks and see if it doesn't come out better.

Actually Delicious Turkey Burgers

I had a pound of ground chicken that needed to be used and I thought it turned out great. It was a bit tricky trying to scale down the ingredients. The only thing I'll do differently next time is halve that garlic.

Six Can Chicken Tortilla Soup

So very simple but so very good. I took some of other reviewers suggestions like 1 can of broth 1 can of cream of chicken. Next time I won't use a can of water to thin it out. I like it thicker. I also added 1/4 t of red chili flake, cayenne & paprika and 1/2 T of chili powder. Since this is the 2nd time I'm making it I decided to rinse off the black beans so the soup wouldn't have an an off putting color and hand shredded the chicken chunks so it would be more evenly distributed.

Vanilla Pudding

I needed a simple pudding recipe for the rice pudding I was making and this was just what I needed. I made it a little more figure friendly with skim milk & splenda and it's delicious!

Easy Pizza Sauce II

I think this is a delicious sauce. With that being said, I think there's too much oregano. Next time I'll try reducing it by half. I also added the sugar as suggested by other reviewers and I think it's a must.

Taco Seasoning I

Orzo and Rice

I thought this was nice change up. Mild, yes, but still had a good flavor from the toasted orzo & butter. I mainly stuck to the recipe. The one thing I did differently was using a beef bouillon cube instead of chicken because it was what I had on hand. I sped the process up a tad by boiling the water in an electric kettle as I toasted up the rice. It was done in no time! I will make this again as the recipe calls for but perhaps putting adding a bit of salt.

Meatball Spaghetti Sauce

Like a lot of other reviewers, I only used the meatball portion of the recipe. I should have read some of the reviews before making the meatballs. I though the meatballs were moist and flavorful but perhaps too moist. They fell apart. Next time I'll reduce how much milk I put into the meat mixture and maybe the breadcrumbs as well.
