Sweet 'n' Spicy Baked Chicken

Wow!! this is really awesome, the first time I made it I didn't bast every ten minutes, and still found it really good :) today I basted it and it is awesome. I do add minced garlic and I marniated for almost 48 hours (got distracted with life), Alsolutely wonderful, dh is definatley taking the leftovers for lunch :) Thank you brendon.mock

Layered Chicken and Black Bean Enchilada Casserole

The only thing I did different was use corn tortilla chip because that is what I had on hand. It was OK the evening I made it but was so dry the next day I couldn't eat the leftovers for lunch.

Parmesan Pork Tenderloin

Wow, I am surprized how good this is! I only had bone in pork chops and always do flour, egg and then bread crumbs when I make something breaded in the skillet, I thought I'd only give 2 of my 4 chops a try with out the egg and flour and these are really good without the egg and flour. This is a really good gluten free reciepe with gluten free bread crumbs. Granted the chops with the flour (tapioca for gluten free)and eggs were pretty good too :) Give it a try as written, pretty good!

Hash Brown Casserole III

I was looking for a gluten free hash brown casserole and stumbled across this one. Instead of broth I used a few tablespoons of sour cream and instead of garlic powder, minced garlic, cooked for about 50 minutes at 350. Pretty good :) Oh, and stirred it all up after adding the milk mixture.

Mexican Bean and Rice Salad

Absolutely wonderful, light and low fat! I just used black beans since I had bought an 8 pack at Costco and was looking for black bean receipes and found this....Let sit in the fridge overnight, excellent lunch with rotisserie chicken.

Wonderful, Toast the ramen noodles and throw in a jalapeno for spice, traded 1 T of olive oil for sesame oil, didn't use the flavoring from the ramen noodles b/c of sodium :( but really was great without.
