Buttermilk Pancakes II
These are so delicious! Definitely allow the eggs milk and buttermilk to come to room temperature. I also sifted all my dry ingredients and made a well in the center to pour and mix my wet ingredients. These are just like the "good old fashioned" pancakes, except they use buttermilk. This gives them an even richer, more buttery taste. One last tip, I let the batter set for about ten minutes while I fry up my bacon on my griddle. I then use an old (clean!) ketchup bottle to dispense the batter. Five stars!!!!

Spicy Shrimp and Grits
This was absolutely delicious! Definitely the best shrimp and grits I've ever had! However,I did have to add some seasonings as it looked pretty bland as is. I only had a can of mild Rotel, so I upped the spiciness by adding a combination of red, black, and white pepper along with basil and thyme to the vegetable mixture. I seasoned the shrimp with N'Awlins seafood seasoning and used Kraft Monterey Jack and Cheddar cheese blend with a touch of Philly. If you haven't used the Philly cheeses yet, you must try them. It gave the recipe a delightful creaminess. Will absolutely make again!

Pasta Primavera with Smoked Gouda
I definitely deviated from the original, and consequently made it unhealthy, but it was so delicious! I added squash and zucchini, but the main difference was instead of topping with cheese, I made a sauce. I took the chicken broth and boiled it in a separate pot. I then added a slurry of 2 tbsp cornstarch and a cup and a half of milk. Once that started to thicken, I added in a cup and a half of the smoked gouda. Definitely not as healthy as the original, but I will be making this again!
