Easy Spinach Lasagna with White Sauce

Excellent lasagna! I made two packets of the knorr alfredo sauce mix (the kind that you add your own milk) and that was plenty of sauce for this lasagna. I do not like jarred alfredo sauce at all and the packets worked great. I also added a couple cloves of sauteed garlic to the mushrooms, used a small pack of already shredded carrots, and I also added a 4oz jar of roasted red peppers which I diced. For the spinach and cheese mixture I added some ground nutmeg and little black pepper.

Margaritas on the Rocks

Crab and Cheese Spread

I really enjoyed this recipe. I just noticed now that you are supposed to put the cocktail sauce on top of the spread. Well, I mixed it right in with everything else and it turned out great. I suggest mixing all the ingredients except the crab (which I fold in at the end) with an electric hand mixer, it gives a nice whipped texture.

Parmesan Artichoke Casserole

I added a box of frozen spinach to this recipe and it looked just like artichoke spinach dip. However, it tasted like pure mayonnaise which I found really yucky after a few bites. I will not make this again.

Mexican Beef Supreme

This is a very authentic recipe. I browned the meat with the onoions and garlic then put everything in the slow cooker for 3 hours on high. Next time I'm going to try this recipe with a flank steak and I will shred the meat after for burritos.

Seven Layer Tex Mex Dip

Mexican Baked Fish

This is such a super simple recipe. I used tilapia instead of cod. Like everyone else I didn't measure the ingredients I just layered them over the fish. The only addition I made to this dish was to add some chopped green onions on top of the cheese and chips prior to baking. It really doesn't get much easier than this. I baked the fish for 25 mins and broiled the top for another 3 mins.

Buffalo Chicken Dip

This dip is excellent! It does taste just like buffalo wings. I cut the recipe in half and used all reduced fat ingredients. I didn't really measure the cheddar cheese, instead I just mixed in a good size handful and instead of sprinkling cheddar on top of the dip I sprinkled some blue cheese crumbles on top. Great dip! I didn't use canned chicken instead I used the kind in the foil pack.

Chicken Enchiladas II

These enchiladas are amazing!! I of course doctored up the recipe to suit my taste a bit more. I put 2 large chicken breasts in my slow cooker and added some chopped canned jalapeños, 1.5 Tbls of Taco Seasoning I (that recipe is also on this site) and then I added a can of cream of chicken and simmered for about 4-5hours on low. When the chicken was done I removed it from the slow cooker and shredded it, left the sauce in the slow cooker and stirred in the 1/2 cup sour cream and green onion (which I did not saute). I did everything else from here on as the recipe instructed and baked it in my oven on 350 for about 40 mins. Also, try looking for Manny's cafe style tortillas which are made with corn flour (they are a cross between a flour tortilla and a corn tortilla). They held up great in this recipe! This is a must try recipe and would be perfect to serve to guests for a Mexican themed evening.

Taco Salad I

This was so soggy and just not very good. I personally will never make this again. I think the suggestion to plate the salads separately would help with the soggy texture but unfortunately that won't help with the taste.

Slow Cooker Beef Stroganoff I

This is an excellent slow cooker recipe! I made all the changes suggested by jillybean such as doubling the sauce but not the cream cheese etc. Although, I do think I used 6oz of cream cheese instead of 4 oz. I did not add a packet of onion soup mix as I feel that would have been salt overload (not sure if jillybean suggested that but a lot of folks did) but I did replace the water with reduced sodium beef broth. Lastly I added some fresh thyme, and instead of buying stew meat I cubed a 2.25 pound eye round roast. This is one of the easiest recipes ever and the results are fabulous!

Honey Mustard Dressing II

This dressing is excellent! I have actually been making honey mustard like this for years but my version did not include lemon. The lemon must be the secret ingredient that mine was missing. I doubled this recipe and used low fat mayo and it came out great. You can experiment with all types of mustard to make this a bit more sharp.

My step mom is puerto rican so I grew up eating puerto rican rice and beans. I make these often and the only thing I do differently is add a good handful of green pimento pitted olives, some cubed pieces of ham and instead of pinto beans I use 2 cans of goya low sodium pink beans undrained. Because I don't drain my beans I cut back the water to 1/4 cup to a 1/2 cup at most. If you don't make your own sofrito try to find a kind in the produce sections versus the jarred kind. My grocery store sells fresh sofrito, so I just keep a container in my freezer for when I make beans.

My Crab Cakes

These are excellent! I modified the recipe slightly by coating the cakes in corn flake crumbs instead of bread crumbs, that gave them a nice golden color. I also skipped the cayenne pepper and garlic powder and added 1/2 tsp of low salt Old Bay instead. As far as the crackers I used 15 reduced fat ritz and 10 saltines. I attempted to only add one egg but after mixing, the mix was a bit dry so I added another one. Oh and last but not least I used one 6oz can of lump crab and one 6oz can of fancy white crab. As other reviewers pointed out these don't need as much oil to cook in as called for, just coat the bottom of the pan with olive and oil and add a Tbls of butter. Great crab both myself and my husband loved them!!

Easy Swedish Pancakes

These were wonderful!! They reminded me of the Finnish pancakes my family used to make when I was a child. The batter is perfect as is and does not need extra flour. I cooked mine on my stove top in an 8" small non stick frying pan over medium heat and it made about 12 perfectly round pancakes. I then stacked them with layers of wax paper in between each one till they were ready to serve. Also 1 minute to a minute and 30 seconds per side was all they needed. I spead raspberry preserves on some of mine and then rolled them up, and they were soooo tasy!! I highly recomend this pancake recipe.

Thin Egg Pancakes

Seminary Muffins

The flavor of these muffins is great but they came out a bit rubbery in texture. I used cinnomon chips instead of chocolate chips. I think I will continue my search for a tasty lower fat muffin.

Shrimp Lemon Pepper Linguini

Absolutely fabulous!! I made this recipe exactly as written with one exception. I added a 1/2 cup of sweet baby peas. I used half a box of linguini but next time I'm using a 9 oz package of fresh linguini. I also grated some fresh parm on to each dish. Yummo! This dish is a must try!!

Spinach Brownies

Spinach brownies are wonderful! I sauteed the onion in 1 tbls of butter and that was plenty of butter for these. These will be great to serve at a holiday party.
