About this Cook
I have been cooking since I was 10 years old and I absolutely love it. My step mom is an amazing cook and I use to enjoy helping her in the kitchen. Most of my cooking skills have come from watching cooking shows.
My favorite things to cook
I love using my slow cooker, especially in the summer when I don't want to heat up the whole house. I love cooking all types of foods and experimenting with all the different flavors. Mexican food is probably my favorite type of food to cook.

I consider it a triumph anytime I make something that someone else really enjoys.
My cooking tragedies
I guess I would consider this a tragedy... The first time I ever baked a pie my cat decided to sneak up on to the counter and take a nice nap right on the pie! I guess he like how warm it was...

Burrito Pie
This was really good and I will make again for sure. The filling is fantastic and would work for regular burritos as well. I cut the recipe in half and am glad I did. It was plenty for my family of 4 and we even have leftovers. I used 1 can of Kuners refried black beans with roasted chilies. I skipped the can of green chilies since my beans had them in it already. I also did not mix in the olives with the meat and beans. I layered them on top of the cheese layers. My tortillas did not get soggy at all, so maybe it is the brand of tortillas that some folks are using. I only used 1 pound of ground beef and 6 tortillas. This dish fit perfect in my Corningware 2.5 qt oval casserole dish. I served it with guacamole and sour cream.

Lentil Chili II
This is really good and I highly recommend giving it a try. I actually made mine in the slow cooker and it turned out perfect. I cooked it on high for 5 hours because I was a little short on time. The only changes I made were to use 1tsp of garlic powder instead of garlic, I am pregnant and I can not stand the smell of raw garlic right now...and I also used 1 qt of chicken broth and 1 qt of water. As for the spices I used a little more than the measurements given here. Turned out perfect.

Fast and Friendly Meatballs
Awesome!!! I added a 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp rubbed sage, 3 Tbls of ketchup, 1/4 cup of Parmesan cheese as well as a 1/8 cup of milk. I kept all other measurements the same in regards to the egg and breadcrumbs. I also used the Italian seasoned ground turkey. I baked these for 20 mins as directed and then put them in my slow cooker with some pasta sauce. I simmered them for a couple hours, they came out great. I have been making a lot of recipes with ground turkey lately and I like it so much better than ground beef. One last tip, when making meatballs or meatloaf mix all the dry ingredients first, then the egg(s) then gently fold in meat, this will ensure that the meat will not get overworked and all ingredients will distribute evenly.
