Coconut Cream Cake I

Oh, wow, here I thought I had invented this recipe! :) I was trying to match a Tres Leches at a restaurant here in Houston and I got pretty close using basically this recipe. I use Betty Crocker Homestyle Frosting Mix instead of whipped cream. It's a marshmallow-ish frosting that's closer to what the restaurant uses. I add heavy cream to the coconut cream/sweetened condensed milk mixture and then I can call it Tres Leches. I've served it as straight Tres Leches for years, and just in the last few years I've started adding coconut. My friend from up north, who grew up with French instead of Spanish, insisted on pronouncing it "Tre-luscious" instead of "Tres Leches"!

Jan's Pretzel Dogs

Oh my goodness! I will be playing with variations of this bread for weeks! There was a little hole-in-the-wall near our house that made Philly Cheesesteak Pretzel Pockets that were to die for. They went under and we wanted to see if we could make our own. We used this dough, but instead of strips around hot dogs we made 6x5 rectangles with a dollop of Philly Cheesesteak filling, folded them over and crimped. With the leftover dough I made a couple of hot dogs. Followed the rest of the recipe with the baking soda bath and rock salt. It was absolutely glorious! My bread machine has never produced such a lovely ball of dough, it's gotta be the beer! Today I'm running the dough recipe through a full bake cycle in the breadmaker to see what it will do. We're guessing the boiling kills the yeast to prevent further rising, so this might blow the top off the breadmaker. I just LOVE experimenting!

Peanut Butter Bars I

In an effort to control our sugar intake, I split the batch and put half in the freezer to take out another time. Well, that didn't help a bit, we just went straight to the freezer for more. Turns out we like them even better that way!

Beer Margaritas

We've been making these at our marina for years as "Marsharitas" because our dock buddy Marsha introduced us to them. I like to give Marsharita kits as birthday presents: a gift bag with the recipe, a good bottle of tequila, a bottle of beer, a diet 7-up and (at the last minute) a can of frozen limeade. Everyone always appreciates them, and they're so much more personal than a plain old bottle of booze. I'm in the market for an unrefrigerated substitute for the frozen limeade if anyone has any suggestions.
