Pork Steak Burritos

I really would give this 5 stars with the changes many people suggested. Add spice. Cumin, chili powder, cilantro, and definitely, definitely, cheddar cheese! Yum!!!

I'm afraid I definitely noticed the absence of eggs, milk and/or butter. Dry, with a "cardboard" taste to it.

Pat's Potato Salad

I make this all the time (using red potatoes and keeping the skins on). I always add celery seed, but it can easily be customized with whatever other flavors you like!

Peppermint Meringues

I didn't have any peppermint, but wanted to add something, so I added some milk chocolate chips (didn't measure it; probably about 1/2 to 3/4 cup). I can't stop eating them!

Eggless Chocolate Cake II

I made this only because I didn't have any eggs on hand. It was wonderful! Like some others, I halved the recipe, using an 8 x 8 pan and baking for about 45 minutes. I then used the Satiny Chocolate Glaze that was posted by Ginger, and then topped it with chopped pecans. It was a hit, and I will definitely make it again, even if I have a refrigerator-full of eggs!

I would give it 5 stars, but I think it needs just a little more flavor. But it's a great 'base' for using leftover turkey, and adding whatever spices or herbs one would like.

Light and Fluffy Spinach Quiche

I actually didn't use spinach, as I didn't have any on hand. So I substituted the spinach with canned asparagus (something I usually reserve for soup only). It turned out wonderfully and my family loved it!

Delicious Ham and Potato Soup

Absolutely wonderful! It certainly is a meal in itself. The only change I made was not adding celery (I didn't have any) and I used 1/4 cup of heavy cream instead of milk (because I had some leftover that had to be used). A great meal to be served with nothing more than a crusty French bread or a simple salad.
