Almond-Raspberry Meringue Bars

Reviewed: Sep. 7, 2014
Superb! Took my favorite ingredients, almond paste, raspberry jam and coconut, and turned them into a fantastic cookie. Chewy, decadent, and easy to make. One caution...make sure the egg whites have reached room temperature, or they won't whip up to stiff peaks. Teensy bit fussy to cut, but worth the work! altogether a total 5-star recipe, thanks, Dinah!

Carol's Baked Ziti Casserole

Reviewed: Dec. 29, 2013
Very, very good! I found though it's easier to fold in the pasta, sauce and ricotta mixture together, then put into the pan, top with additional mozzarella at end. Overall, very good! Brava, Carol!

Slow Cooker Pulled Pork

Reviewed: Aug. 18, 2013
Outstanding! Used a pork loin, make sure you use a good quality root beer. Used Famous Daves BBQ sauce, piled on bun with cole slaw on top. Family loves it!

Creamy Guacamole with Garlic

Reviewed: May 2, 2013
My family loved it! The cream cheese added a wonderful flavor and creaminess, the salsa (I used fresh) and garlic the right amount of zing. WIll definitely make this again....and again!

Only change I made was substituting ground sweet Italian sausage for the sliced....fennel is a nice touch! very good basic meat sauce.

My Chili

Reviewed: Nov. 5, 2012
Very good basic chili recipe; added 1 tsp cumin, substituted pinto beans (drained) for kidney beans. Next time will add a bit of cocoa powder for a little more richness.

Moroccan Tagine

Reviewed: Nov. 15, 2010
Tried with a few modifications....upped to 3 b/s chicken breasts, 4 cloves garlic, 2 carrots, used chicken broth instead of veggie broth....was very good, could have used a bit more seasoning. I found it took closer to 45 minutes for the vegetables to be tender....but we really enjoyed the flavor blend, my family now likes butternut squash!
