Oatmeal Raisin Cookies IV

These are my husbands FAVORITE cookies. I'm not much of an oatmeal raisin lover, but I have to admit, these are GOOD! My modifications: used 4 eggs, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp of salt, unsalted butter, and I always bake on parchment paper. Perfect every time!

Broiled Tilapia Parmesan

I make this OFTEN for my hubs and 10 year old daughter. They both LOVE it. I use reduced fat mayo and Old Bay instead of the other seasonings. A winner!

Egg in a Boat

Growing up, my Grandma made these for us all the time; we called them "Toasted Yolkies." A few tips: 1) butter or spray the griddle/pan. 2) Flip once, just for 30 sec to cook/toast the top. 3) this might sound weird, but it tastes REALLY REALLY good if you spread a very thin layer of grape jelly on the outside toast. 4) don't overbook the egg! It's supposed to be runny so you can soak up all the yolk with that bread! 5) try using Texas toast....works very well.

Chicken Pot Pie Soup

This was great! I doubled the recipe, made in the crock pot, used 98% fat free cream of chicken soup and took a little help from the store and used the meat from a ready-made rotisserie chicken. I think the rotisserie chicken added a ton of flavor! Superb!

Low-Fat Blueberry Bran Muffins

These were great! I accidentally added too many blueberries, so they were a bit soft and heavy, but that was my fault. My 9-year-old LOVES them and I feel great about letting her eat them!

Original Homemade Italian Beef

This was FREAKING AMAZING. Do yourself a favor and make this--exactly as written. Don't change anything. You won't be disappointed. I used a rump roast and served on toasted hoagie buns! We ate this 3 days in a row until it was gone, and STILL wanted more! I used about a quarter of the juice in the jar and it was perfectly spiced for us.

Best Spinach Dip Ever

YUM. I make this a little lower in fat/calories by using reduced fat mayo and sour cream...nobody knows the difference! Also, I double the water chestnuts for extra crunch. Can't find the Leek soup mix around here, so I use the Knorr SPRING Vegetable mix. Closer to the Leek and much better than the plain ol' Vegetable everyone else uses. Always gets rave reviews and is the first thing to be gone!

Awesome and Easy Creamy Corn Casserole

YOU MUST TRY THIS. I make it all the time, but it is especially great for Thanksgiving and Christmas meals. People always ask for the recipe and I know it by heart, so it's easy to pass on the joy! If you ARE making it for a holiday meal, double the recipe. Trust me, you will not have leftovers.

Jamie's Cranberry Spinach Salad

Rating this a 5 because of the dressing (though I did cut the sugar down to 1/4 cup). AMAZING. I add all the dressing ingredients to a mason jar, shake, and viola! It's ready to go and ready to travel. I use it on a salad of spinach, dried cranberries, Brie, and pine nuts. DELICIOUS! You can also add chicken. The dressing is so much better than any bottled dressing and super easy to make. This is now my "go to" dressing. Thanks!

Chicken and Dumplings III

This was RIDICULOUSLY awesome and easy! Used a little over 2 cups of chicken broth and about 1 cup of water to boil 5 chicken breasts. Added some frozen peas and carrots and 3 bay leaves. Used 1 can cream of chicken and 1 can cream of celery. Used 1 can (~12 oz) of Grands reduced fat buttermilk biscuits. My family devoured it! Can't wait to make it again.

Spring Cleaning Cookies

Fantastic! Used all butter (not a fan of the artificial ingredients in shortening), one cup white/one cup whole wheat flour, and half & half instead of evaporated milk (just b/c I didn't have any EM). For my add-ins, I used what I had in the pantry - coconut, semi-sweet choc chips, white choc chips, rolled oats, and craisins (soaked in warm water for 15 min to plump them up before draining and adding). Hubs says they are addicting! Thanks for a great recipe to use up all the leftovers in the pantry!

Brooke's Best Bombshell Brownies

Holy YUM! Took another reviewer's advice and used 2.5 cups white sugar and .5 cup brown sugar. Also, my family loves the peanut butter/chocolate combo, so I used Reese's peanut butter chips instead of chocolate ones. I'm sure glad I did as the brownies are very rich and chocolatey. Will definitely make these again and again!

Peanut Butter and Banana Dog Biscuits

My dog loves them! Used 1/4 more PB and oatmeal instead of wheat germ. Flattened with fork & fingers instead of rolling/cutting. Such an easy and super fast treat! I feel so much better knowing exactly what I'm feeding my pooch. Break them apart and stuff in his Kong with extra PB or cream cheese and he's busy for quite a while! Thanks for the recipe!

Pork and Shrimp Pancit

Restaurant quality food right here! My tweaks: used chicken & shrimp instead of pork. Didn't have already-cooked chicken, so I marinated the chicken in 2 TBSP soy sauce, 2 TBS Fish Sauce and a pinch of brown sugar about an hour ahead of time. Didn't have oyster sauce, so used the chicken marinade instead, and added about a TBSP more soy to the dish at the end. Used cabbage instead of Bok Choy, as that is what I had on hand. Left out the red pepper to see if my kid would eat it, and she LOVED it (9 years old). Hubs and I added red pepper to our own bowls. Superb!

Man Pleasin' Jambalaya

I signed up to be a member of allrecipes.com just so I could review & rate THIS recipe. It was fabulous; just made the following alterations: used linguica ( portugese sausage) instead of smoked sausage, added 3/4 lb of shrimp at the last 10 min, omitted carrots, doubled celery, added Tony's Cajun seasoning to chicken when browning, and the added another Tbsp to broth when I put the rice in. I also added 4 cloves of garlic when sautéing the veggies. I did not add tomatoes, as my husband is allergic, so that's what attracted me to this recipe. The tomatoes were not missed! This made a TON of food, but it's jambalaya-it's supposed to! Leftovers were AWESOME!

Chef John's Macaroni and Cheese

Excellent! Be sure to watch the video...it helps you understand how you can alter this to your specific tastes. My alterations: I used a mix of Monterey Jack and Sharp Cheddar and put ALL 3 cups in the rue, then sprinkled just a little more MJ on top. I increased the Panko to 3/4 cup, and omitted the Thyme (I'm not a fan of thyme) and Cayenne (only b/c I knew toddlers would be eating it and I wasn't sure if it would be too much, so I just didn't use any at all, to be safe). I also like mine saucier, so I only used about 12-13 oz of the elbow mac. It was a HUGE hit! Thanks Chef John!

Buttermilk Coleslaw

Good way to use up extra buttermilk. Definitely add more sugar than called for...and I recommend using all mayo, as written. I used some mayo, some sour cream and it just didn't work as well.
