Oatmeal Raisin Cookies IV

Reviewed: Nov. 21, 2010
These are my husbands FAVORITE cookies. I'm not much of an oatmeal raisin lover, but I have to admit, these are GOOD! My modifications: used 4 eggs, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp of salt, unsalted butter, and I always bake on parchment paper. Perfect every time!

Awesome and Easy Creamy Corn Casserole

Reviewed: Oct. 28, 2010
YOU MUST TRY THIS. I make it all the time, but it is especially great for Thanksgiving and Christmas meals. People always ask for the recipe and I know it by heart, so it's easy to pass on the joy! If you ARE making it for a holiday meal, double the recipe. Trust me, you will not have leftovers.

Chicken and Dumplings III

Reviewed: Oct. 15, 2010
This was RIDICULOUSLY awesome and easy! Used a little over 2 cups of chicken broth and about 1 cup of water to boil 5 chicken breasts. Added some frozen peas and carrots and 3 bay leaves. Used 1 can cream of chicken and 1 can cream of celery. Used 1 can (~12 oz) of Grands reduced fat buttermilk biscuits. My family devoured it! Can't wait to make it again.

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Oct. 15, 2010
These are pretty good! I tried to make them a bit "healthier" as some others did. My adjustments: 1/2 cup butter with 1/2 cup applesauce, 1 cup white flour and 1/2 cup wheat flour, 1 teaspoon baking soda, used all brown sugar, only 1/2 tsp of salt, no nuts, 1 cup 60% cocoa chips and 1 cup white choc chips, and refrigerated the dough for 3 hours before baking. Lots of adjustments, but they are yummy! My 8 year old loves them!

Blueberry Oat Bars

Reviewed: Sep. 26, 2010
These were very good, but next time I won't use as much of the crumble mixture in top-it was too much. I used 3 cups frozen blueberries and 1 cup fresh raspberries. My whole family loved them!

Peanut Butter Stuffed Jalapenos

Reviewed: Sep. 26, 2010
Very bland. Couldn't taste the jalapeño at all, as some other reviewers said. Just tasted like warm peanut butter. I'll stick with stuffing them with cream cheese and wrapping them in bacon.

Brooke's Best Bombshell Brownies

Reviewed: Sep. 26, 2010
Holy YUM! Took another reviewer's advice and used 2.5 cups white sugar and .5 cup brown sugar. Also, my family loves the peanut butter/chocolate combo, so I used Reese's peanut butter chips instead of chocolate ones. I'm sure glad I did as the brownies are very rich and chocolatey. Will definitely make these again and again!

Peanut Butter and Banana Dog Biscuits

Reviewed: Sep. 14, 2010
My dog loves them! Used 1/4 more PB and oatmeal instead of wheat germ. Flattened with fork & fingers instead of rolling/cutting. Such an easy and super fast treat! I feel so much better knowing exactly what I'm feeding my pooch. Break them apart and stuff in his Kong with extra PB or cream cheese and he's busy for quite a while! Thanks for the recipe!

Tom Ka Gai (Coconut Chicken Soup)

Reviewed: Sep. 12, 2010
Very yummy, but made a few alterations: added about 4 tbsp of truvia to add some sweetness. Also added an extra tsp of powdered Ginger, as we really like a strong Ginger flavor. Used lite organic coconut milk. Next time I will add more chicken and mushroom as well. Overall a great base recipe. Thanks for sharing!

Man Pleasin' Jambalaya

Reviewed: Sep. 11, 2010
I signed up to be a member of allrecipes.com just so I could review & rate THIS recipe. It was fabulous; just made the following alterations: used linguica ( portugese sausage) instead of smoked sausage, added 3/4 lb of shrimp at the last 10 min, omitted carrots, doubled celery, added Tony's Cajun seasoning to chicken when browning, and the added another Tbsp to broth when I put the rice in. I also added 4 cloves of garlic when sautéing the veggies. I did not add tomatoes, as my husband is allergic, so that's what attracted me to this recipe. The tomatoes were not missed! This made a TON of food, but it's jambalaya-it's supposed to! Leftovers were AWESOME!
