Healthier Potato and Cauliflower Soup

Really, really tasty--you'd swear there was cream in this. Two suggestions: I thought 10 cloves of garlic would be too much, so I added 7, and that was PLENTY; it has a strong garlic bite to it. Also, use a good-quality stock here. In some soups, you can get away with some cheap bouillon broth, but because there are so few ingredients here, each one needs to be good on its own.

Sweet Potato Bread I

Really tasty. I cut back the sugar to 1 cup and even then it was just verging on too sweet, so definitely feel free to cut back on the sugar. Additionally, I only used 1 egg and then substituted the other egg with 1 tablespoon of corn starch dissolved in 1/4 of a cup water. I definitely recommend it.

Eclair Cake

Good, but not over-the-moon great. It tastes exactly like its ingredients -- pudding and frosting, with a little graham cracker. It's a dessert to make for the family, but I wouldn't bring it to a party. Also, save yourself a bunch of calories by skipping adding whipped topping into the pudding; the pudding just tastes like pudding, and isn't discernibly better with the addition of whipped topping.

Mississippi Mud Brownies

Followed the recipe to the letter, except for subbing Can't Believe It's Not for the butter. (Kind of like ordering a Diet Coke with fast food. I know.) Like other reviewers, I second just spreading the marshmallows on top -- just to make it look prettier, because I mixed the mallows in the batter and now my brownies look a little, er, stretchy. Also, really only make half the recipe as posted. Which leads to my next point: the poster wasn't kidding about these being rich. You'll really only eat a 1x1 inch piece before feeling like your head might pop from a sugar overdose -- this is not a dessert that goes quickly.

Roasted Butternut Squash and Garlic Lasagna

This is fantastic. Followed the advice of other reviewers and added 2 layers of fresh spinach -- didn't make the dish taste "spinach-y" at all. Definitely skip the whipped cream; the dish is plenty rich without it. Lastly, I fried up a little sage and added it in when I added the squash. The herb gave it a more rounded flavor.

Cherry Almond Coffeecake

Oddly bland. I used reduced-fat sour cream and pie filling with artificial sugar, so that might've been my bad. Even the glaze -- which added significant calories -- had no taste. I'd keep looking for another coffee cake recipe.
