Lemon Cake with Lemon Filling and Lemon Butter Frosting

I made this for Easter dinner. It was very good. I would actually make a little more icing next time, I seemed to run a short. Other than that, it was a very good recipe! The lemon curd is delicious.

Peanut Butter Oatmeal Cookies

My family loved these cookies. I use butter in cookies instead of shortening and also added raisins. I have a request to always have these baked and handy!

Gel's Green Beans and Beef

Very good!! The only thing I would mention is to make sure your fresh green beans are VERY FRESH. If they are old, they don't get tender enough when cooked like this. The whole family loved it, even the toddler. Quick and delish!

Fortune Cookies I

I strongly recommend adding 2 tablespoons of butter to the batter or they will stick to the cookie sheet. Also, we had to thin it out a bit witha tiny bit of water. I added both vanilla and almond extact, and reduced the sugar to 2 T a batch. I made over 100 of these for a wedding. We had best results by making no more than 4 at a time and cooling in a muffin tin. Also, the cookies were just not crunchy enough for my liking. So, after they were formed, I stuck them in a 250 degree oven for about 10 minutes to get them drier.

Mom's Oatmeal Blueberry Pancakes

The batter was so thin..I ended up adding about 1/4 cup more flour, and letting it sit for about 30 minutes. The oats kind of sucked up the liquid, and it was much more manageable that way. They were very tasty!
