Coriander Steak Marinade

This recipe should read "Coriander - dried flakes" which is the same as Cilantro. Not sure how this translation happened but I have never used the seed so not sure how it would work and I am sure the amount would have to be adjusted. You can buy the flakes in spice jars or bulk typically. Happy BBQ'ing!!

Grandma's Blackberry Pie

I have been sitting on my tush with a broken leg dreaming up food cravings and a craving for blackberry pie has been tormenting me. Last night my hubby was a sweetheart and made me this! We only had about 3 cups of berries, so we made this in a 6" pie plate and used Pillsbury pastry. We used 1/3 cup of sugar to compensate for the amount of fruit and it was delish with some ice-cream! The idea of putting the apple on the bottom really worked for us.

Pork Fried Rice

For the oil, use what you feel you need to keep the stir-fry moving. If you can do that on 2 tsps. total, great! I think the trick to using less oil is to get your pan just the right temperature. If the heat is too low the oil gets sucked up quickly. I never measure when I cook my tried and true recipes so estimating the amount of oil was difficult, I admit. I have switched to light olive oil in my kitchen for almost everything. Grapeseed oil would be best for this as it is really light and can tolerate higher heats without compromise. For those saying the recipe needs flavour - follow the recipe!!! I know powdered ginger doesn't give the flavour, hence I advise FRESH in the recipe and should be used to taste.

Alfredo Sauce

I am not the biggest fan of pasta but my family is. I doubled this recipe. When I was comparing recipes, this one looked the best to me but I did use 1/4 cup butter for the recipe as written and added parsley & garlic. Garlic went in at the start with the butter and the fresh parsley 1 minute prior to serving. I served it with a egg noodle tagitelli ~ absolutely wonderful!! I served it with Spoon Rolls from this site and a thin cut chicken breast breaded in panko and rubbed thyme (dried). I will repeat this meal for company adding a ceasar salad.

Spoon Rolls

These were absolutely yummy!! I only had 5 hours for my fridge time, but pushed ahead with great results. I was trying to duplicate something I saw on Hell's Kitchen and was similar to some buns we had in a restaurant once. These were restaurant worthy for sure! I baked mine in a mini muffin tin, brushed with egg and sprinkled with sesame seeds. I baked for about 18 minutes.

This was great!!! I did it in my bread machine on the 'dough cycle', rolled into balls and let rise under a towel 30 minutes. As per some suggestions I added 1/2 tsp of baking soda to help the dough bubble when cooking; substituted the milk for greek yogurt and reduced the flour to 3.5 cups for using the bread machine. Then rolled into oblong shapes (see my pictures). We grilled it on LOW direct heat on the BBQ (propane). I did start them on indirect heat for my sample but it not bubble at all and dried out. I probably did about 3 mintues per side and sprinked with seasalt as they came off the grill. Kept them warm in a large foil pouch (vented) while the chicken finished. We wound up handing some over the fence to curious neighbors because it smelled like heaven!! A new family favorite!

Spicy Chipotle Grilled Shrimp

Wowzers! For the 1st time ever, I bought Chipolte peppers in adobo sauce! I did a tiny finger taste before adding them to the marinade and decided we were not really made for each other :) I added 1 tsp of finely diced hot red pepper and added no cayene as I know I am not a fan. I still found them a bit spicy, but DELISH!!!! I only realized now as I came back to review that I doubled the red pepper flakes by mistake. We loved them! Served with cuke/sweet pepper salad tossed in tzatizi dressing. Rice would have paired nicely also, but dieting and without it, this recipe and salad is in the rules!

Tree-Shaped Crescent Veggie Appetizers

I took this to a work party and not only did it get great reviews for flavour but it was the only show stopper there! I did one very large tree on a foil oven liner. I used Philly whipped herb & garlic cream cheese and multi colored peppers, finely chooped heart of celery and green onion for decorations. I put another large cookie sheet underneath to transport and it held up perfect for the trip!

Boiled Mustard Potatoes

I made a single serving of these using 1 potato and 1 tbsp of mustard (as per AR conversion). I agree with other reviewers the flavour is a bit understated. I will try adding a bit more mustard next time. Fresh ground sea salt was very nice on these. I served it with ham and sauteed cabbage. Would be great with corned beef also!

Easy Fruit Cobbler

I made this tonight with frozen (pre-thawed) peaches. It was very good and gets points for EASY!!! The only hard part is the hour baking time wait :) Served with vanilla ice-cream.

Waikiki Meatballs

I made these last minute because someone onte Buzz got me thinking about meatballs and this recipe at 4:00pm, lol I found the sauce just a bit sweet for my taste so I added about 2 more tsp. of soya sauce and a dash of worchestshire sauce. I also used dark brown sugar because I prefer it for a savory sauce. That is completely personal taste though. It was a really nice thick sauce.

I actually made these in March 2011, but when the recipe was published, the reviews vanished. This is a copy/paste of my review. - Awesome Recipe!! We throughly enjoyed these for dinner with a bowl of green pea soup ~ Thank you What's For Dinner Mom!!! I had a very "Fun" experience making these (see my Profile/Cooking Tragedies for a laugh at my expense). I got these all ready, boiled, egg wash and salted and baked 1/2 the batch right away and put the other 1/2 in the fridge until closer to dinner (about 1.5 hours) there was no difference in the end result ~ perfection! Will definately make these again :)

Honey-Ginger Grilled Salmon

This would have been 5 stars for sure if it hadn't burst into flames the second I put it on the grill! LOL It was very "chargrilled", but the meat we could salvage was incredibly tasty! Next time, I will preheat the grill, but then let it cool a bit before putting salmon on and I won't be popping back in the house!

Marshmallow Delights

My son (18) did these with his friends the other night and they thought they were very good ~ we served them with a hot caramel sauce for dipping. They kind of burst in the oven tho and made quite a mess! My advice is to spray the pan lots (even outside the actual muffin cup) and place on a foil lined cookie sheet to avoid the clean-up I am facing. We would still recommend them tho:)

Lemon Yogurt Muffins

I made these today and love them! I didn't do the topping because I didn't feel we needed the extra sugar for breakfasts and glad I didn't! They are perfect for our taste, not too sweet, the lemon flavour is there without being overpowering and they are moist with a bit of crunch on top! Next time to compensate for not making the glaze I might add a bit more lemon zest. Love this recipe and look forward to trying it with orange also ~ you could put a few chocolate chips in these and call them cupcakes they are that light!

Parmesan Sage Pork Chops

Fantastic!!! I skipped the skillet step and put them on a cookie sheet @375 for about 50 minutes. Really nice crunch and wonderful flavour. Don't skip the lemon, definately adds something in a very quiet way! (I didn't have have any plain sage, so used a bit of poultry seasoning)
