Chocolate Avocado Pudding

I’m not a fan of avocado, but we are giving it try. So far it isn’t going well. My son was in another room while I was making this, but he doesn’t like the smell. I’m assuming it is the cocoa powder (a new brand for me). While making it the cocoa was really over powering, but there is a strong taste from the avocado (I’m sampling to get it right). I’ve added more sugar, vanilla, and peanut butter to tone down the avocado taste, but I think it needs something more. Since the pudding hasn’t past the smell test I don’t think it will past the taste test. Next time I try to make this I will take another reviewers advice and use an under ripe (but still soft) avocado and bananas and my regular brand of cocoa powder. Hopefully I won’t have to tweak the recipe more than that.

Yummy Sweet Potato Casserole

With the exception of baking my potatoes rather than boiling them and whipping them in my mixer I followed the recipe to the letter. This is one outstanding casserole! I also made another casserole from a different recipe because one of my guests didn't like pecans. That recipe I did not care for except the topping. So for now on I'll use this recipe, but the other topping with pecans or a pecan walnut mixture. Here is the topping recipe: Pour ½ cup flour into a small mixing bowl. Cut in ¼ cup soften butter until the mixture is coarse and add 1 cup crushed walnuts (or pecans). Pour 4 TBSP maple syrup in a small saucepan on low heat, once heated add 1 cup brown sugar and melt into the syrup. Next add 1 TBSP butter to the maple syrup/brown sugar mixture Pour the syrup mixture into the bowl with flour. Combine together just enough with your fingers, don't over mix! Spread the mixture over your sweet potato dish. Lastly take ½ cup of crushed walnuts (or pecans) and sprinkle evenly on top. Bake for 30- 35 minutes. Enjoy!

Outrageous Chocolate Chip Cookies

This is a good recipe. I made it the first time today. I followed the directions to the letter and it is a good cookie. I have to say when I first read the ingredients that I thought a banana will go well with it. After eating the cookie my daughter and husband said the same thing. Next time I make this I will add 1 banana and try another reviewer's suggestion and turn the oatmeal into a flour. Apparently my kids aren't crazy about oatmeal cookies. I think changing the texture will fix that. Update 11/29/13 I added a banana, my son loved it, but to me it needed more so I added about 1/4 cup Nutella. This recipe is a keeper!

Easy Crustless Zucchini Quiche

I followed the recipe 100%. If I was making bread I would think this recipe as great 5 star even. This was my first quiche and I was expecting more of an eggy dish. I saw another recipe on this website similar to this except they said add 2 cups milk. I don't know if that will turn out bread like too, but I'll give it a go next. I'll keep this recipe for a savory bread.

Creamy Au Gratin Potatoes

followed the recipe except for dicing the onion- otherwise my children wouldn't eat it, but the potatoes were bland. I think garlic and bacon grease would give it more flavor. I used sharp Cracker Barrel cheese and to be honest it looks funny on my potatoes- almost like cottage cheese but not quite. My Cracker Barrel cheese doesn't taste sharp eithet. I don't think I'll make this exact recipe again. I'm not sure if it had too much milk, but ithis dish definitely needs more flavor.

Basic Crepes

It was my first time making crepes. This was a good recipe. I tried it the way the instructions said, and for me it needed more flavor. I gradually added more ingredients so the flavor was to my liking. In the end this is what I added: 1 tsp vanilla, 2 TBSP powder sugar, and a dash of cinnamon. I like the end result. Next time I'll try to prep stuff to add to the crepes. I'll have to do that in advance because I was too hungry to wait.

Baked Potato Soup

Fantastic soup! I found the recipe and I wanted to try it before I actually had all of the listed ingredients so I made substitutions. I didn’t have half and half so I use sour cream. I didn’t have the large potatoes so I used new potatoes. I didn’t have American bacon so I used the local bacon (from the UK), and more than the 3 sliced recommended. I quartered and baked the new potatoes in the oven before adding to the soup and since I don’t like hot sauce I omitted it. The potato soup turned out great. My husband especially enjoyed the taste of the roasted potatoes. The next time I made it I used American bacon. It was still good, but a bit greasy. I hope I can keep finding British bacon where ever I live. Thank you for the recipe

Pizza Pasta

My family liked it no complaints from them- just me. This was a good dish, but like others have said it was missing something- perhaps pizza sauce instead of speghetti sauce and maybe garlic. I know I like garlic on my pizza.

Nat and Darcy's Amazing Eggplant Lasagna

Thanks for the recipe, my husband and I really liked it. I did 2 things a little different. I didn't have bacon slices so I used Hormel Real Bacon Bits about 2 1/2 oz from the 3 oz bottle and I layered it just like everything else. (The original recipe didn't say to layer the bacon.) It didn't have a big bacon flavor, but each layer was thoroughly covered with bacon. I had left over eggplant so I grilled it with olive oil and balsamic vinegar and a dash of salt, pepper, garlic powder and onion powder. I notice the paper thin slices tasted the best. Next time I plan to make all of my eggplant slices paper thin, and grill them the same way and then put it in the lasagna and see how that turns out.
