Spinach Lasagna Rolls

I have been making a very similar recipe for years. The only difference is I add 1 egg to mine (which I think makes the filling a little more firm and less runny.) I also make it into one big roll. I have always gotten rave reviews on mine but was looking for a way to make individual servings to bring to my work Christmas party. This recipe totally fits the bill! Thanks so much for submitting a recipe that is EXACTLY what I'm looking for!

Three Olive Spread

This was pretty quick and easy to make. You REALLY have to love olives for this one. I gave it 4 stars because I guess I just don't love olives that much.

Tangy Floret Salad

I really liked this salad. It's a really tasty way to get all your veggies in. I also added some chopped celery because I had it on hand and it gave it a nice, fresh crunchiness. I made it for my hubby and my parents when they were visiting and got rave reviews!

Wonderful Banana Cake

Great recipe! I made some changes based on other reviews. I used 1/2 cup of applesauce instead of oil, added 1 tsp. vanilla extract, 1 tsp. cinnamon, 1/2 cup sliced almonds and used 3 bananas. It was done perfectly after about 45 min. Very moist! Possibly moist to the point where it could be considered a little mushy, but probably my fault because I added that extra banana. I will be making this again- with one less banana.

Mock Champagne

Love this mock chamagne! I served it for my baby shower and everyone loved it! I usually don't like punch but this one is perfect- not too sweet. I got tons of compliments and a few people asked for the recipe. Made it with sparkling grape juice and it was perfect. I especially love the ice ring since it doesn't water down the punch. It was all gone before the ring melted anyways :)

Italian Style Meatloaf I

Made just a couple of changes. I added a can of diced tomatos (drained), like some other reviewers did. I drizzeled about half a jar of marinara over the top. Awesome!

Easy Swedish Pancakes

Like a lot of the other reviewers on here, I was also looking for a Stockholm Inn style swedish pancake. Haven't had one since I left Rockford years ago and this recipe really brings back those yummy memories!

Fresh Tomato Shrimp Pasta

Very good! Light and tasty. I used tomatoes, oregano and basil from the garden, which was a really good call. I did season the shrimp with a little Old Bay which gave it a little more of a seafood taste. But all together it was great. I was surprised that my husband liked it so much since he usually prefers heavy sauces and tons of cheese. This was a nice, healthy compremise for us.

Pork Chops and Cheesy Scalloped Potatoes

I loved this! I was a little nervous at first- porkchops with chees? But it turned out great! I took a previous reviewers recomendation and went with broccoli cheese soup instead of cheese sauce (just hate the sauce all together). I also added some frozen broccoli, mushrooms and minced garlic to just add more veggies. I made about half the recipe and only needed to cook it for 4 hours in the slow cooker. The pork chops were "fall apart" awesome! I will defontaley be making this one again!

Stuffed Cabbage Rolls

Yummy! This was my first time making stuffed cabbage and they came out great! It was intimidating making these for my husband, especially since he is used to his Polish mothers cabbage. But he loved them! He even said they were better than his mothers. I did make just a couple of modifications. I added some italian sausage just because I didn't have enough ground beef. And I used tomato bisque with a can of diced tomatoes instead of just the soup. Great recipe!

Scalloped Potatoes I

Yummy! Made a couple of changes. The store actually didn't have cheese soup so I used cream of mushroom instead. Topped it with fried onions instead of cheese and it made a great addition. Definately a keeper!

Cheesy Tuna Noodle Casserole

I made this tonight. It was pretty good. Props for being easy to make and taking little time to prepare. I didn't have peppers so I used spinach instead. I also used crushed up triscuits for the topping instead of bread crumbs ( I use these for a breaded pork chop recipe). Overall all very good, simple casserole. I like it because I used up some leftovers.

Scrambled Egg Muffins

I loved these! The 5 stars is actually from my husband who is pretty picky about food. I added sliced mushrooms to the bottom of the cups and poured the egg mixture on top. I also mixed in a little chilli powder. Topped them with salsa. They were great!

Broccoli and Artichoke Bake

Recipe was ok. I did make a couple of changes based on other reviews. I only used 2 tbsp. of light Mayo and replaced the sour cream with cottage cheese. I added garlic and salt and pepper and it still came out a little bland. Maybe because I cutting down on the mayo- it didn't seem like enough sauce for the veggies. I did like the tomatoes on the top though- it was a good lively contrast with the other veggies.

Margarita Marinade

I really wanted to like this marinade because it sounds so fresh and unique. When first making it the tequila was overwhelming so I added a little more honey and lime juice. Luckily after letting the ingredients mingle for about 4 hours, the alcohol taste was taken down a lot. But as one reviewer mentioned, it was missing something. I didn't taste the lime even though I put extra in. Overall it was ok on chicken, but I probably won't try it again.

Slow Cooker Casserole

I liked this recipe because it was easy and filling. A good comfort food casserole. I did halve the recipe so it was done in 4 hours. Overall I would say pretty good and I didn't find it too salty but I did have too thin it out a little with some milk as it was getting too chunky. I did think it was missing something though, it was a little too bland for me because I prefer a little zip. next time I will probably add in some mushrooms and maybe green peppers or scallions. But I will make it again and just modify a little bit.
