Quick and Easy Brownies

I made these for co-workers over the weekend. I made some changes like everyone, but the basis of the recipe is fantastic! Everyone raved about them, so without further adieu...Here's my go to recipe for from scratch frownies. :) 1 c. Brown Sugar 3/4 c. White Sugar 1/4 c. Powdered sugar 3/4 c. Cocoa Powder 1. tsp Vanilla 4 Eggs 1 1/2 Cups Flour 1/2 tsp. baking powder 1/2 tsp salt 1 C. Semi-Sweet Morsels Melt butter, beat sugars for a few minutes, so the brown is well incorporated. No one likes grainy brown sugar. I followed the rest and scraped down the sides a few times in the kitchen aid. Thanks again because it was my first time making scratch brownies and these were a HUGE hit!

Quick Chicken Parmesan

This was a quick and easy dinner for my fiance and I. I had breast tenderloins, just seasoned them with misc. spices and threw some sauce with little cheese over them. Next time I will marinate them with Italian dressing and white wine with my overload of spices. I just didn't feel like being in the kitchen forever tonight. Thank you!

Pumpkin Chocolate Chip Muffins

I woke up to a chilly morning in the South suburbs of Chicago this morning and decided to make these for my whole house. I substituted the apple sauce for the oil, used a sugar substitute for 1/2 c & used un packed 1/4 c dark brown sugar. I used a whole cup of pumpkin, one egg & used two whites. Lastly, I used 1 c of white & 1/2 c. whole wheat flour, 1 tsp pumpkin pie spice, & 1 tsp of cinnamon. My whole house loved them. My sister hates pumpkin even ate one because I just said they were chocolate chip ones. Plus, my dad (he hates everything semi healthy) raved about them. I will be making them again. :) Thanks much!

Fluffy Cake Doughnuts

I love this because I bought a little doughnut pan for five bucks today, no instructions or anything. I'm a pretty healthy eater, just I'm a sucker for sweets & I love to bake. I subbed a lot of stuff due to the fat content like egg whites, used nonfat milk, margarine for the shortening, and splenda. I omitted the nutmeg, although I love it. I made all different kinda of doughnuts in one batch. I added 1 1/2 tsp of cocoa powder to the remaining of the batter for 3 minis, added some pumpkin pie spice & more cinnamon for 3, and left the other 6 the basic recipe. I made a fat free cream cheese/sour cream frosting for them. So delicious, I will continue to make these. Thank you!

Strawberry Muffins

LOVE LOVE LOVE this. I read other recommendations and added 1 tsp Vanilla, 1/4 c. brown sugar, 1 tsp Cinnamon & 1/4 c old fashioned oats. I substituted the applesauce for the oil, whole wheat flour for white flour, splenda for the sugar, and good old fashioned egg whites for the eggs. Delectable! So fresh out the oven. I always spray my muffin cups, so they don't stick to the paper when not using any fat. Thanks to all!

Wheat Germ Whole-Wheat Buttermilk Pancakes

I liked this overall recipe. I changed quite a few things. I used egg whites, apple sauce, club soda, and old fashioned oats instead of wheat germ since I don't own any. I cut this recipe down since I just made for myself. Also, I added 1 tsp. of Vanilla, a dash of cinnamon, and a little bit of splenda (I honestly didn't measure it, I just sprinkled it in after I had a pancake to add some sweetness). I still could taste some baking soda in there. I don't know how to shake the taste, but I'll figure it out in the next batch. This is a keeper for me. :)

Playgroup Granola Bars

Oh man. This is out of this world. I like that they are cake-like with my substitutions. I reduced the brown sugar to 1/3 c., now I can definitely reduce it some more or even eliminate it! I do not own any wheat germ or flax yet, I have to look into it, so I just eliminated that part all together. First, I upped the cinnamon to 1tsp and used whole wheat flour. Next, I subbed sugar-free maple syrup for the honey and used whites instead of an egg. I also used 1c. of Applesauce like others have suggested. I'm going to the store to get some dried fruit since I don't have any to make some more this week! I'm sick of wasting money on breakfast snacks for my breaks at work and I could make them healthier, yesssssss! Thank you all :) Awesome.

Amazing Whole Wheat Pizza Crust

I just added more wheat flour instead of white flour to this recipe. I grilled these bad boys on a pan on the grill. The best crunchy crust ever! My fiance even loved them! I raved about it so much, I took the recipe on the road to make for my family while on vacation. They all loved it too, even the kids! Fantastic!

Whole Grain Waffles

So, I looked in the recipe book that came with my dad's waffle iron and the whole grain recipe did not suit my liking. I came here and found this one. (I made a half batch since I'm the only person that eats wheat flour in almost everything) I did not have any wheat germ, so I omitted that out of the recipe. Instead of eggs, I used whites. I added more appy sauce instead of using oil. Instead of using white flour, I just added more wheat flour. I substituted the oats for flax. Lastly, just added 1 TB of brown sugar and some fresh ground cinnamon. O-M-G. Best waffles I ever had! Topped them with the sugar free syrup and had some turkey bacon. Man, it was fire. I'm definitely making a whole batch next time to freeze, so I can just grab and go. Thanks a bunch!
