About this Cook
I'm Katie, I still live at home with my family, friends of the family, my fiance, and numerous pets. I recently got engaged on April 1st, 2010. This is what fueled me to learn to cook. I learn from my parents, but I put my own healthier spin on everything. I work out 3-4 times a week for a year now. I've been bettering myself since May 2009 and haven't looked back. I feel like a teenager again, it's liberating. Also, I'm a crazy cat lady and love heavy metal. =^_^=
My favorite things to cook
I love to bake. I try to bake at least 3 times a week. I love to cook chicken and turkey with lots of vegetables I enjoy. I'm very picky.
My favorite family cooking traditions
Marinated pepper encrusted pork tenderloin, Chicken or beef stew with dumplings, French Grey salt seasoned baked chicken thighs, Homemade potato salad and potato au gratin.
My cooking triumphs
Everything but low fat/low calorie frostings come out amazing. :)
My cooking tragedies
Baking is a bit trickier with substituting fats and sugars. The cakes come out perfect, the frostings always give me a hassle.

Quick and Easy Brownies
I made these for co-workers over the weekend. I made some changes like everyone, but the basis of the recipe is fantastic! Everyone raved about them, so without further adieu...Here's my go to recipe for from scratch frownies. :) 1 c. Brown Sugar 3/4 c. White Sugar 1/4 c. Powdered sugar 3/4 c. Cocoa Powder 1. tsp Vanilla 4 Eggs 1 1/2 Cups Flour 1/2 tsp. baking powder 1/2 tsp salt 1 C. Semi-Sweet Morsels Melt butter, beat sugars for a few minutes, so the brown is well incorporated. No one likes grainy brown sugar. I followed the rest and scraped down the sides a few times in the kitchen aid. Thanks again because it was my first time making scratch brownies and these were a HUGE hit!

Pumpkin Chocolate Chip Muffins
I woke up to a chilly morning in the South suburbs of Chicago this morning and decided to make these for my whole house. I substituted the apple sauce for the oil, used a sugar substitute for 1/2 c & used un packed 1/4 c dark brown sugar. I used a whole cup of pumpkin, one egg & used two whites. Lastly, I used 1 c of white & 1/2 c. whole wheat flour, 1 tsp pumpkin pie spice, & 1 tsp of cinnamon. My whole house loved them. My sister hates pumpkin even ate one because I just said they were chocolate chip ones. Plus, my dad (he hates everything semi healthy) raved about them. I will be making them again. :) Thanks much!

Fluffy Cake Doughnuts
I love this because I bought a little doughnut pan for five bucks today, no instructions or anything. I'm a pretty healthy eater, just I'm a sucker for sweets & I love to bake. I subbed a lot of stuff due to the fat content like egg whites, used nonfat milk, margarine for the shortening, and splenda. I omitted the nutmeg, although I love it. I made all different kinda of doughnuts in one batch. I added 1 1/2 tsp of cocoa powder to the remaining of the batter for 3 minis, added some pumpkin pie spice & more cinnamon for 3, and left the other 6 the basic recipe. I made a fat free cream cheese/sour cream frosting for them. So delicious, I will continue to make these. Thank you!
