Cranberry Brisket

In spite of the trouble I had, the results were tasty and I look forward a more successful attempt. I mistakenly elected the 4 hour cooking time and burned the marinade, the bottom of the meat and most of the cranberries. I had trouble getting a good tight seal on the baking dish with the aluminum foil - this may have contributed to my problems. When I try again I will probably try a lidded casserole dish.

Carrot Patties

THANK YOU HAGGITH! I am a carrot freak and am always looking for simple, flavorful carrot recipes. Boy do I love these! I prepared them basically as written (used whole wheat bread crumbs and a GIGANTIC clove of garlic - about the size of 3 average cloves). I saw that I was out of regular vegetable oil so I used my olive oil. YUM! I think frying in olive oil and using the giant garlic clove were the two keys to success here. I served topped with plain yogurt and walnuts. Those of you who thought they were bland and added all kinds of spices, and gooped them up with chili sauce and soy sauce and who-knows-what should try frying them in olive oil and letting the delicious flavor of these patties through! I am also confused about why some thought they fell apart. I had no trouble with that.

Baked Corn II

I made this for Thanksgiving - I was looking for a corn side dish that wasn't completely loaded with sugar or cheese and this was perfect - and easy! I used evaporated milk because I drink 2% and was afraid that would create the problem with setting that others had. It worked great!

Lemon Chiffon Pudding

The cake part on top was nice, sponge-cakey, but the "pudding" on the bottom was soupy and sickeningly sweet. This is not for me.

Sour Cream Pound Cake

Baked in a star-shaped layer pan for my husband's birthday - cooking time is about half. Start checking at about 30 minutes or when the FABULOUS AROMA fills your kitchen. Like many, I also added vanilla. Simple, superb, and my new favorite cake recipe!

London Broil I

I have made this twice and did not marinate the full 24 hours but still got good results. The second time I added meat tenderizer to the marinade and was please with the results.

Persimmon Pudding Cake

This was indeed dense and delicious. I took Bachers suggestion and added 1 t. nutmeg and 1/2 t. cloves. I chose this recipe rather than some of the others because it had a lower sugar content than most of the persimmon desserts I saw. It did rise, but it'ts a small amount of batter for the size of pan suggested, so it was low but pretty. (see picture) I may try without the spices to see if I taste the persimmon more. Thanks Kiana!

Cream Cake

I was doing my typical "what can I make with the ingredients I have on hand," so since I had heavy cream and no butter, I found this. I had to halve it since I only had 1/2 c heavy cream, but it was just the right size for my husband and I. I used a 6" metal pan from a graduated set of metal pans I have to bake it in. The finished cake sliced into 4 generous-sized pieces (2 for today, 2 for tomorrow!) Delicious, easy. I put 10x sugar and some cherry preserves on top. Yum!
