Chicken Enchiladas II

I make this often - I use the Pepperjack Cheese soup (2 cans) and combine it with about 1 cup of sour cream. I put a little of this into the chicken mixture and some cheese into the tortillas before rolling. Pour the rest of the sauce over and put cheese on top. The spicy soup makes the difference!

Slow Cooker Chicken Creole

I have made this several times - I use 4-6 boneless breast halves, double tomatoes and celery. Added several jalapenos - even some habaneros. I only cook mine on low for 5-6 hours, but I have a newer model crockpot: I think it cooks faster. Served over brown rice - excellent flavor.

I make these a lot: I have started using the Southwest pepperjack soup instead of cream of chicken. I double the sauce. I also use chopped jalapenos instead of green chilis.

Mexican Chicken Corn Chowder

I substituted one 15 oz. can of crushed tomatoes for the chopped and added considerably more spice - we like the heat! I did not get a lot of corn taste - maybe it needs a little more?

Bread and Celery Stuffing

I usually do not use a recipe for my dressing: this one was like what I always aim for but don't always hit when I don't measure. I like to very lightly toast the bread, then let my 9 year old tear it up.

Porcupines

I make these slightly differently: brown the porcupines in a skillet, add a large can of tomato sauce (not soup) with about 2 T brown sugar and 1 T powdered ginger stirred in. Cover and simmer on the stove for an hour or two. Even my picky toddler loves these!

Chicken Delicious

My family really loves this. I use 6 breasts, the same soup/seasoning/sherry combo. I only cook it for 5-6 hours on low. I take two forks and shred the chicken after about 5 hours, then stir in 1 cup sour cream mixed with 1/4 cup flour for the last hour of cooking. The sherry makes the flavor difference.

Alyson's Broccoli Salad

Using freshly cooked bacon makes a much better salad than the bacon bits from a jar. I also usually double the broccoli or add some chopped lettuce - made exactly as the recipe says is too heavy on the dressing for my taste. This is always a hit at potlucks and parties.
