Turkey and Quinoa Meatloaf

Reviewed: Apr. 4, 2014
First time coming quinoa. Glad I made this recipe. Modified just a tad. My package of ground turkey was only 16 oz. Didn't have tomato paste so I used a tad over tablespoon of surachi (spicy oriental sauce) and tad over tablespoon of catchup. Didn't shape meatloaf to big so it doesn't take very long in oven. I'm thinking about 45 mins.

Onions Au Gratin

Reviewed: Dec. 23, 2013
I modified this recipe. I will make again. I used 2 onions and placed in a pampered chef pie plate. I sauteed the onions in couple tablespoons of butter for about 5 or so minutes. I didn't measure out exactly but I made 1/4 cup of beef broth, put enough flour into broth to make thick consistency. Added enough heavy cream to thin it out just a tad. (Usually don't have cream on hand but did because of holiday recipe) stirred all this together with onions then put into pie plate, sprinkled sharp cheddar (only thing on hand) then baked 30 mins uncovered. Nice change to onions

Jalapeno Strawberry Jam

Reviewed: Aug. 30, 2011
very simple to make. I used 2 quarts of strawberries and the recipe made 10 - 1/2 pint jars. Wasn't too spice. I like to pour over a block of cream cheese with some crackers.

My kids love this and a great way to use many (or large zuchinni's). I even add walnuts/pecans on top.

Potato Chips

Reviewed: Apr. 16, 2011
This is a great quick munchy snack for my kids and I. I'm glad I tried it! I used my Pampered Chef mandolin and sprayed the plate and pototoes lightly with cooking spray. Cooking time for my microwave was longer than recipe stated and I also flipped over towards the end. I recommended this recipe to my teens/preteen children for when they get hungary for a snack and I am not at home.

Mini Ham And Cheese Rolls

Reviewed: Feb. 6, 2011
I didn't have any minced onion so I used fresh garlic and forgot the mustard. I also used 3/4 stick of butter and did half the sandwiches with hot pepper jack cheese and the other half swiss. They turned out great!

Grilled Wild Duck Breast

Reviewed: Sep. 8, 2010
The best tip I can give when cooking any duck breasts is do NOT overcook. Cooking on grill is best. Breast should be medium to medium rare. Allow meat to rest 10 mins before cutting. If you overcook- it will give a more wild taste. We eat a variety of game meat all the time. This is the best tip someone should use.
