Cheddar Ranch Dip

Add some chives or chopped green onions, real crumbled bacon and a dash of paprika or cayenne on top. Men really love this at parties and taligates!

Oatmeal Peanut Butter Cookies

As it turned out ... I thought I had peanut butter in the pantry but only had Nutella. OMG --was this ever an awesome "substitution"!! As other reviews suggested, I added more oats and used unsalted butter instead of shortening and margarine. You just can't go wrong with this recipe ...even if you have to make some personal changes. Just make sure your flour and baking soda is fresh as it could cause you to have a flatter cookie. I keep mine wrapped tightly in the freezer and only take out only what I need ... seems to work!

Rainbow Pasta Salad II

Very tasty! To lighten this up but still keep some flavor, I used a bottle of calorie-free Italian Dressing (yes, it does exist) and added 2 Tbsp. of reduced fat feta cheese and 1 Tbsp chopped fresh basil. This cut the calories by half. When you are on a 700-calorie per day diet, every calorie counts!

Jamie's Cranberry Spinach Salad

Excellent! To cut down calories, I toasted almonds in the oven without the butter. Used 2 Tbsp honey (warmed) instead of the sugar and used 1/4 cup olive oi. It was still very delicious and cut the calories in half!

World's Best Lasagna

Not a fan of sweet Ital sausage so I swapped the amount of sausage (1 lb.) with the lean ground beef (3/4 lb) and it was an absolute HIT! I didn't want to share the recipe, but what the heck ....Johnchandler did and many thanks for posting it on allrecipes.com!

Artichoke Chicken

I was out of mayonnaise and no time to run to store so I substituted low-fat cream of chicken soup and it was fabulous! Next time I will substitute low-fat cream of mushroom soup.
