Lazy Golumbkis

Great flavor and really easy to make. Definite crowd pleaser. I made this for my wife and 1 year old son, both of whom loved this dish. Only adjustment I made was to pour 3/4 cup water after reading reviews about crunchy rice. I used Bismatti and it turned out perfectly. I even had enough confidence in this recipe that after trying it just once I committed to making it for this years big Christmas family feast. I KNOW it will be enjoyed by all!

Easy Chicken Parmesan

Delicious and seriously EASY. Do yourself a favor and cut your breasts in half so they are nice and thin and you will have wonderful tender peices of chicken to eat.

Pizza Casserole

Instant favorite! I love this dish. Add whatever pizza toppings you like and follow the directions and you will end up with a dish everyone will enjoy. My favorite additions to this recipe are double cheese and a can of black olives! I try to use healthy substitute items wherever I can since it is so good and I want to make it often and guilt free. Definitely satisfies any craving for pizza!

One Egg Lemon Pound Cake

EASY for a first time baker. Need to made it more lemony somehow. I doubled the amount of Lemon extact but it could still use more. Lemon Icing will help but I'd prefer to have the cake taste more lemony. Maybe some lemon zest next time?

Slow-Cooked Chili

Excellent as a base recipe! Though I'm not sure how this would fare on it's own. However, because this is such a good starting point for a great chili, I still think it deserves an good rating. I won't bore you with every little alteration I made but I will say this: do yourself a favor and add ALOT of veggies, and also there is no need for Cumin! (I actually discovered that Cumin is "that flavor" I hate ((but didn't know what it was)) when it is prominent in some chilis just by smelling a labelled can of it for the first time)

Broccoli and Cauliflower Casserole

Delicious. I used mushroom soup instead of chicken, and I cooked the water out of 14 oz of mushrooms and added that. I used Velveeta as my "processed cheese food". Next time I will use something that looks nicer for the crunch on the top, the crushed crackers made it look a bit underwhelming.

Slow Cooker Marmalade Curry Chicken

Instant favorite! With just minimal adjustments this dish was perfect. I served it with carmelized onion naan over a bed of rice and quinoa. Lots of flavors here..I had fun as my wife tried to identify the different tastes in it without knowing the ingredients (she couldn't put her finger on the marmalade). The modifications I made are as follows: 1 250 ml jar marmalade, 3 teaspoons curry powder and add 1 can coconut milk 1 hour before it is done. I did NOT find this dish too sweet or too spicy at all...just right. I will be making this many times over.

Slow Cooker Bean Casserole AKA Sweet Chili

Great recipe, even the 18 month old loves it. Tweek it a little to suit your tastes though. I add 2 cups of corn, 2 cups of peas and a cup of shredded carrots to add some nice nutrition!

Hearty Hash Brown Dinner

Delicious! My Wife and 1 year old both loved it too! 4/5 because that much Velveeta would have surely ruined the dish! This was a great tasting meal that will have a place in our regular dinner rotation. Leftovers were awesome too! Do yourself a favor and be sure to make these modifications: Replace Velveeta with 100g shredded cheddar, Add 4 cloves garlic and use Cream of Broccoli soup instead. Next time I am going to try using fresh potatoes instead of hash browns!

Slow Cooker Taco Soup

Quite good though it was quite a bit more like Cili than soup. 1 pcket of taco seasoning wasn't enough to give it that taco flavor, next time I'll try two. So the recipe as it is falls a bit short as Taco Soup, but made a pretty tasty Chili.

Slow Cooker Chicken and Dumplings

Pretty good but needed quite a few modifications. I also found that the leftovers didn't reheat very well. I had never ate anything like this before so I wasn't sure what to expect. The end result was chicken soup-tasting concoction with bready dumplings inside. I would definitely look into substituting something for the chicken soup as I found the chickeny-stock taste to be too prominent. This recipe also desperately needed veggies so I added 2 cups of 'em as well as 4 cloves of minced garlic. I only used 1 can Pillsbury Country Biscuits (10 Count) and that was MORE than enough. I flattened the dough before placing it in the cooker like was suggested but was not necessary. The result for me was thinner biscuits in the end than I would have liked. Because my wife loved the dumpling part, I might make this again, but probably not any time soon.

Mushroom Lentil Barley Stew

My Wife and I really enjoyed this after only minor customization, and it is SO easy to make! It has really nice flavors and my wife was very pleasantly surprised to see me attempt something that was vegetarian. I didn't even find myself wishing there was meat in it! Although I didn't enjoy the leftovers so much (slightly gummy texture), the first feed with some garlic bread went down famously! I will definitely be making this again. Here are some minor adjustments that we made: Used 1 portabella mushroom cap instead of the shitake (availability issue), 1 whole white onion in place of dried flakes, Upped the amount of garlic to 4 cloves (will increase this even more next time as we are garlic lovers), and reduced the amount of black pepper to 1 teaspoon (although next time I will use even less as we still found that much black pepper to be a bit overpowering). Only had to cook on high for 4 hours and it was ready!

Slow Cooker Pulled Pork

Overall I ended up with a fairly nice slab of meat. I don't believe the Root Beer did anything at all for the loin. I had to use a rub from another recipe and glad I did because the meat would have been quite tasteless. This recipe also loses points for asking you to use prepared barbeque sauce. I used a delicious sauce recipe I got somewhere else and would suggest you do the same. So as a whole this recipe requires too many additions and judgements calls to give it a high rating as a stand alone. I suggest trying a different pulled pork recipe altogether.

Vegetarian Pumpkin Spinach Chili

Not bad. Definitely something that can be tweaked (and probably should). The best part was the smell of the house! Most of the vegetables can be swapped based on your tastes. The one change I would definitely make for next time is to reduce to 1 tbsp pumpkin spice. I found it fairly overwhelming and by the end of the dish I felt quite saturated by spice. My wife seemed to enjoy it more than I did so I may make it again in the future (though she agreed...too spicy).
