Rolled Buttercream Fondant

Very easy, forgiving fondant recipe for this first-timer! I will definitely make it again. I read the tips in these reviews and found them VERY helpful, especially the ones about spreading regular frosting on the cake first so the fondant sticks, and rolling between two sheets of wax paper. Worked like a charm! I also used half butter and half shortening and everyone at the party raved about how good the frosting tasted. I didn't find the "greasy" texture to be a problem. In fact, it allowed me to smooth the fondant with my fingers and repair little bubbles and cracks. Addendum: Just taught my almost-8-year-old Cub Scout how to make this. This time, we used all shortening and it tasted just as good. He had fun and it turned out great!

Persimmon Cookies I

Better than grandma's! This recipe made 3 dozen 2 1/2" cookies with a cakelike/spongy center and slightly crispy edges. Perfect! The 2.5" cookies took about 13 minutes at 350 in my gas oven near sea level. The 3" cookies took closer to 15 minutes. I didn't have any walnuts, so I left them out. Still, really yummy. These cookies passed the "skeptical husband" taste test and made my whole house smell sooooo good. I think I used the Fuyu variety of persimmons: still firm when ripe and shaped like a squat tomato (no point on the bottom). I peeled them, diced them and pureed them well in a blender. I will definitely make these again if I can get my hands on more persimmons!

Apple Crumb Pie

Really easy to follow this recipe. I spooned the apples into the crust (just like it says) and left the juice in the bowl. If you dump the whole thing in, your pie might be really soggy. Your apples are going to make or break this recipe! Mine may have been a little too bland but I'll add some lemon juice to bring out the flavor next time...and I will make it again!
