If you love potato salad in the summer, but you're afraid it will send your blood sugar through the roof, here is news from RealAge on the  subject.  By chilling the potatoes overnight they form "resistant starch crystals."  Studies have shown that by chilling the potatoes overnight (and serving with vinegar)  they form "resistant starch crystals," thus reducing the high glycaemic and insulinaemic features commonly associated with potato meals. And resistant starch helps the body incinerate more fat for fuel while making less fat available to stash away in fat cells.  So enjoy your potato salad, as  long as you avoid those mayonnaise dressings.

Thank you for putting the link to the study. "Resistant starch crystals" sounded a little hokey to me but after reading the study, it seems like an interesting idea.

This seems really "woo" to me, and while there may be at least a smidgen of science behind it, it seems like it'd be better to just eat whole grains which do this naturally and come with a bunch of added vitamins and minerals. I don't like potato salad though, so maybe I'm just showing my bias. Yucky!
