Creamy Potato Casserole

I made this for our work Christmas party, I wasn't sure if it would go over big, but boy I was wrong everyone loved it. I covered it with foil for the first 30 min, then for the last 10 min, cooked it uncovered, till it browned. Also I used the light sour cream, to cut out some of the fat.

Old Italian Meat Sauce

Simply terrific!! I'm from a long line of great Italian cooks, but I haven't been one of them. My sauce was never as good as "the grandmas", but since I tried this recipe, thats all changed, everyone loves it, (including grandma)now I get to make the sauce every Sunday. Only change I made was I use 2 cups of red wine instead of 3. I used a Cabernet Sauvignon.

Garlic Prime Rib

My first prime rib, but not my last, I can't believe how easy this was, and so good. I made this for 8 adults and it got rave reviews, my husband said it was the best he ever had. I was so nervous, I've been known to overcook many a roast, but not this one, it melted in your mouth. The only changes I made were like some of the other reviewers stated and I browned it at 460 for 12 min. and then another 8 at 400, reduced it to 325 and cooked for 20 min per pound. I took it out when the temp registered 125 (was getting nervous), and let it sit out for 20 min. It was definatly a perfect rare in the center and med-rare on the ends. Terrific! The only change for me would be maybe take it out when temp reached 130, because I like more med-rare to med. But trust me no one complained, it was high 5's all around.

Pistachio Crusted Chicken

Great recipe, the family gave it a 10 I used whole breast pounded and split in half. Was crisp and the chicken was very moist, will become a family favorite, not one bite was left. I also made the raspberry sauce and it accompanied it well.

Broccoli with Garlic Butter and Cashews

I'm not a broccoli lover at all, but I wanted to make something healthy for the family everyone raved over it, and I couldn't stop eating it. I used the Smart Balance in place of the butter. Definatly a keeper

Low-Fat Blueberry Bran Muffins

Terrific muffins, the entire family loved them. For bran muffins I was very surprise how moist they were, I did use the yogurt in place of the applesauce and I used lowfat soy milk, added the cinnamon as others suggested and put in alittle flax seed. Will definately make again and try some other fruits.

Baked Asparagus with Balsamic Butter Sauce

Great taste, I had to make a double batch, so I decided to make 1 just as the recipes stated, and the other with the suggestions about more vinegar, than soy. I actually liked the original recipe best. I just used low salt soy and it was perfect. Thanks for a great way to serve asparagus. A definate keeper

Grandma's Green Bean Casserole

Great casserole, wasn't a drop left. Only changes were I used half sour cream and half cream of chicken soup. And I sprinkled All-bran cereal on top in place of the cracker crumbs without butter. Very tasty.

Brown Sugar Meatloaf

This was terrific, my first meatloaf, I did use oatmeal instead of the crackers, the onion soup mix intead of the onion and I added 1 Tbl. worchister sauce. Oh, and I too, put the topping on top, not on the bottom.

Chocolate-Cherry-Banana Breakfast Smoothie

My husband and I loved this recipe, I didn't have chocolate soy milk, so I used vanilla and just added 3 TBL chocolate ovaltine. Was terrific.

Kathy's Roast and Vegetables

Great roast, I didn't change a thing, except I used a 6 lb. rump roast and cooked for 8 hrs. on low in the crock pot. The sauce was terrific.

Rich and Creamy Tomato Basil Soup

This was perfect, tomato basil is one of my favorites soups, very nice flavor. My daughter and my mother were fighting over who was taking home the left overs. I just started my first tomato garden. Now I can't wait for my first crop.

London Broil

Chicken and Red Wine Sauce

Great simple recipe, like others I added an onion which I browned first then added the garlic, and I added some mushrooms. Both my husband and I really liked this, I served it over brown rice.
