Chipotle Crusted Pork Tenderloin

I made this for company and they loved it. I only used 1 TB. of chipotle as some suggested, and that ended up being the only criticism, a few said they would of liked it a little more spicier, go figure. So next time I'll make the recipes exactly as written. (I used Mrs. Dash® Southwest Chipotle Seasoning Blend) I think in this case its just a matter of how much heat you can handle.

Fire Roasted Tomato and Feta Pasta with Shrimp

This tasted great, and was so quick, hubby couldn't believe it when I told him dinner was ready after just 30 minutes. I used gluten free pasta and I think it sucked up a lot of the sauce, so I add about a 1/2 cup of white wine and it came out perfect.

Lemon Chicken Piccata

I made this for our Sunday family dinner, came out awesome, not a drop left. I used chicken tenders and pounded them and then the only other change was I added and 1/4 cup of white wine, when I added the lemon juice. Yummy

Chef John's Italian Meatballs

Terrific. I usually don't make meatballs, because my husband constantly raves about his italian mothers, so I figured why bother. Well, now my granddaughter asked me to make meatballs, so I decided to give these a try. Let me just say my husband actually said "these are the best meatballs he ever ate" and the whole family loved them as well.

Best Formula Three-Cheese Fondue

First time I ever did fondue and this was really good. I added the flour to the shredded cheese's like others suggested and it came out perfect, nice and smooth! I couldn't find the Emmentaler so I replaced that with fontina and it was great.

Easy Chicken Enchiladas

Family loved these, and they were definitely easy to make and delicious, I only used 3 cups of cheese, which I thought was plenty, that is the only reason I gave 4 stars. Make sure you grease the pan. I made an "Enchilada Sauce" from scratch from a recipe I found on this site, also delicious was the one that had semi-sweet chocolate in it....Yummy!

Linguine Pasta with Shrimp and Tomatoes

Didn't change a thing and it came out terrific! Husband literally said like 5 times. "man this is great" It was so easy too! I used a Pinot Grio for the white wine. Will definately be making again!

Baked Maryland Lump Crab Cakes

Made these for a family party, I needed a double batch, so I decided to make one batch with fresh lump crab meat and 1 batch with the can crab meat, no one could taste the differeance between the 2 batchs, they both turned out excellant. I replaced 2 eggs for the substitute and they came out perfect

Quinoa and Black Beans

My family loves black beans and rice, I've been trying to get them to eat something a little healthier so I tried this on them. What a hit it came out perfect, and they all loved it. I didn't have onions are fresh garlic, so I substitued garlic and onion powder and it still came out great.

Ginger Glazed Mahi Mahi

I'm not a fish lover, but my husband loves fish, so I was trying to find some thing that I would enjoy as well. This recipe was it, I really loved it, I actually ate the left overs the next day and they were yummy. I didn't change a thing. It came out perfect!
