Slow Cooker Chicken and Dumplings

Reviewed: Aug. 20, 2011
I took the advice of others & used some additional seasoning such as paprika, poultry seasoning & pepper. I also added fresh parsley & garlic & used 1/2 chicken broth & 1/2 water. I only used one package of biscuits. It took almost 2 hrs for the dumplings to cook. It was delicious! I served it over peas. The leftovers were even better the next night. I mixed in the peas, placed everything in a pyrex dish, topped with the 2nd package of biscuits & baked on 350 for 30 minutes. Thanks for the recipe! I will be making this again!

Chicken Breasts with Lime Sauce

Reviewed: Aug. 15, 2011
The sauce is scrumptious! I dipped my chicken in flour, then egg, then breadcrumbs, browned it in the olive oil then trasferred it to a cookie sheet & baked it in the oven on 350 for 20 min. I used 2 limes, 1/2 the amount of butter & some chicken broth when making the sauce, as suggested by others. I will definately make this dish again! Thanks!

Yellow Squash Casserole

Reviewed: Aug. 12, 2011
This was so delicious! I used zucchini instead of yellow squash. I got distracted and forgot to stir in the 1/4 cup of melted butter. I already put the rest of the topping on, so I just drizzled it on top. It still came out fantastic!

Rosemary Ranch Chicken Kabobs

Reviewed: Jul. 19, 2011
Delicious! I omitted the salt as recommended by others. I also added zucchini, vidalla onions & mushrooms to the skewers. I marinated everything for about 2 hours & reserved about half of the marinade to baste with as I was grilling. I can't wait to make this again!!!!

Slow Cooker Enchiladas

Reviewed: Jul. 4, 2011
Delicious & so easy to make. I used 1.5 lbs ground turkey & also doubled up on the corn tortillas, as suggested by others. I cooked it on high in the crock pot for close to 1.5 hrs...it came out perfect! Next time, I may add some black beans & jalepeno peppers.

I followed the advice of others and seasoned the chicken with some garlic powder & seasoned salt. I didn't have any swiss cheese so I used shredded cheddar & montery jack. I loved it & thought it was delicious! I can't wait to have the leftovers for lunch tomorrow! I will definately make this again!

Olive Chicken II

Reviewed: Jun. 15, 2011
Very good! I took the advice of others and added some seasoning...just a little oregano & basil. I also floured the chicken before I browned it & used a can of diced tomatoes since I didn't have any fresh ones. I served it over brown rice. It was very tasty. I will definately make this again...but try it in the crock pot. Thanks for the recipe. I love green olives!

Strawberry Bread

I halved the recipe...added a tsp of vanilla extract & omitted the pecans (since my hubby doesn't like nuts in his food.) We loved it & can't stop eating it. I wish I made 2!

Spinach Stuffed Chicken Breast

Reviewed: May 19, 2011
I followed the recipe exactly...except I used turkey bacon. It was delicious and definately deserves 5 stars for taste. The only reason I gave it 4 stars was because the way mine looked. I had the spinach filling squirting out of the sides. I will definately make this again, but next time, I will use less spinach & less sour cream. The left overs tasted even better the next day!

Sour Cream Coffee Cake III

I followed the recipe exactly. The cake is good...but not what I was expecting. It's a cross between a butter cake & a coffee cake. It's very moist...almost a little too moist.
