Chicken Pot Pie IX
I love this dish! I made a few adjustments. I sautéed the cut up chicken in olive oil and added white wine. The chicken went into the pan, then the cooked vegetables, then the sauce. I added a bit of cream to the sauce and I also added poultry seasoning and some chili flakes. And finally, instead of pie crust I put the entire mixture in a baking dish and then added film dough on top, brushed it with olive oil and baked it for 25 minutes. The dish has a bit less calories b/c of less dough. My husband loves it.

Hamburger Cheese Bake
This was fantastic! Of course, like so many others I modified the recipe. I sliced up 1 Italian sausage link and cooked it with the hamburger. I added 1 tsp. of Italian seasoning; I used 1/2 of 12oz can of tomato sauce and 1 12 oz. can of diced tomatoes. I added to eggs to the cottage cheese and sour cream and I left out the cream cheese, green onions and Parmesan cheese. My recipes makes 6 servings at 465 calories a serving. My husband and I just raved all weekend we loved it so much. One more thing, when you take it out of the oven (we baked it for 25 minutes) let it sit for about 10 to 15 minutes -- the flavors meld and the taste is great.

Oat Bran Muffins
These were very good muffins. I made some modifications: I didn't have oat bran so I used oatmeal (which turned out well); I used whole wheat flour as others have mentioned they used; I used 3 tbsp. of coconut oil and instead of 1 cup of applesauce I used 1 1/2 apple/pear sauce. I also added cinnamon and vanilla. Finally I only used 1/4 cup brown sugar and 1/4 cup splenda. Also I though 400 degrees was too hot so I cooked the muffins for 15 minutes at 375 which was plenty of time. I could have cooked for 12 or 13 minutes and that would have probably been sufficient. These muffins are going to be my healthy snacking/breakfast muffins.
