Ginger Rhubarb Crisp

This recipe is wonderful with or without the ginger! I only had half the amount of Ruhbarb, but had already added all the ingredients for the base for the full amount. I decided to still go with it and put it in a 8 x 8 with the ingredients for the top halved. After 30 minutes, it was perfectly cooked and amazing! Thanks for the great and easy recipe!

Flourless Chocolate Cake I

A-M-A-Z-I-N-G!!! Must eat with vanilla ice cream or coffee as it's very rich. I didn't have the chocolate the recipe called for, so just used a large bag of dark chocolate chips. This was a Mother's Day hit for a Mom who loves chocolate!

Slow Cooker Zucchini Soup

Amazing! Used a few differnt things based on what I had in the house. Sausage was precooked, so got to skip the first step of frying and draining and dirtying another pan. :) Also used an extra can of tomatoes to make a thinner soup, potatoes, black beans, corn, and carrots. And used 1 tsp of salt (figured people could always add more to their own dish). Yummy!

Megan's Granola

Make this with coconut oil instead of the vegetable oil!!! Much, much better for you and adds a hint of yummy coconut. I replaced it with 1 cup coconut oil. Favorite granola for sure!

Summertime Tilapia

Very good! Definitely worth letting it sit & marinate (vs cooking it right away like I did the 1st time). I didn't use shallots & replaced the red wine vinegar with 1/2 white wine vinegar, 1/2 balsamic vinegar because I had it on hand. Had some left overs & accidentally ended up eating it with fresh tomatoes...yum! That was super yummy!
