Perfected Sweet Coleslaw

Reviewed: Jun. 21, 2012
Every time I make this, samplers are freaking out! This is truly a delicious slaw. It takes on an orangy-hue after it sits because of the orange juice and red wine vinegar. I love it when fresh cabbage is in season locally, and our friends and neighbors give to us from their crops. As soon as I know cabbage is in season, this is all I can think about is making some freakishly delicious slaw :)

Shrimp and Asparagus Casserole

Reviewed: Sep. 23, 2011
Yumz- I added a bit more asparagus and went with the chicken broth, and my whole fam loved it. I've caught a lot of shrimp this season and was looking for different ways to eat them, and this one is a definite keeper~

My whole family loved this, plus my Mom made it for her and her sisters and they loved it, even raved about it on my facebook page! I doubled the sauce and did 1/2 white sugar and 1/2 brown sugar, used thighs like the recipe said. GRREAT

Skillet Lamb Chops

Reviewed: Mar. 7, 2011
5 stars ONLY IF YOU CAN NOT GRILL AT THE TIME- otherwise grill your lamb, please. This recipe came in handy in a pinch when plans changed and no time to grill- 30mins to simmer a bit too much, try about 20mins. Used just a little bit of chopped green onion instead of regular, added a pinch of rosemary- turned out very nice~ Thanks!

Bacon Cheese Frittata

Reviewed: Mar. 1, 2011
I've made this twice now. Both times I added sausage and mushrooms. The first time was for my Sunday School class, I doubled it, and brought it in a 9x13 baking dish- everyone loved it. This morning, since my wife is a vegetarian and I and the twins love meat, I had to separate it, so I made them in the muffin pans (grease the pans first). They also turned out stupendous. Either way, this is a verrrry good recipe. I really like the green onion flavor, my wife didn't. Plus, I added a pinch of ground cayenne pepper for just a bit of kick, and never tell anyone about that because they freak out

Sunday Shrimp Pasta Bake

Reviewed: Jan. 28, 2011
Used fresh mushrooms, used whole grain linguini, and a whole bunch of parmesan on top instead of the measly teaspoon! Very good- but just a tad too spicy for the rest of the fam, next time will use Rotel Mild- Mine was not watery at all... instead, it was too thick, I added water to it before storing the leftovers. Over all, very good but just a little spicy for some folks- not me ;)

Individual Baked Eggs

Reviewed: Nov. 7, 2010
Yeow, A+++! I made a dozen of these for my Sunday School class and they were a huge hit! (sprinkled a tinge of ground red pepper on top of eggs before I put the cheese on, don't tell!)

Sausage Potato Casserole

Reviewed: Sep. 5, 2010
Loved it- made it for my Sunday School class, used Half & Half and added a bit of ground cayenne pepper, perfect- not soupy- nice and thick. NOTE: because of previous comments about how oily it was, I drained the sausage in a colander and pressed into it with a bowl on top to squeeze all the oil out best. It was not oily at all
