Sofrito

I love, love, love this recipe. I took the advice to make it in bulk and freeze it in ice cube trays and store the cubes in a plastic bag. It makes the arroz con pollo meal much easier that way. It doesn't lose flavor when you use the sofrito frozen. Thanks for this one.

Baked Dijon Salmon

This is one of those dishes where I'm shocked that anyone wouldn't give it 5 stars. But then again, you can't please everyone. I follow it to a tee and everyone loves it. In my estimation there are people who love salmon and don't want anything to overpower the flavor and those who tolerate salmon and couldn't care less either way. I suppose the former may not like this recipe because the mustard can add a lot of flavor (we use german mustard). We eat salmon at least twice a month and this a delicious and simple way to change things up. Hooray for another excellent addition to Lenten Friday dinners!!

Burrito Pie

Let me start by prefacing with "I am not a casserole dish/dinner type of person." But this one is a keeper recipe. I followed the advice to spread the beans onto the bottom tortilla shell and to use 3 tortilla per layer. I only had enough for 2 layers in a 9x9 pan with 1/2 of the recipe. Which means I had tortilla with cheese sprinkled on it as my top layer. I was nervous it would burn but it didn't. In fact, it added a nice crispiness to the dish. Next time I'm making a full batch to save one for the freezer!

World's Best Lasagna

Just another person raving about this recipe. My husband and I are always pumped for lasagna night. The sauce does take a lot of work but is definitely worth it. I always make a double batch in a stock pot and freeze 1/2 for later use. That way I don't have to go to all the work as often as I'm enjoying it on the table! Thanks for a really great recipe.

Exquisite Pizza Sauce

I really love this recipe. It is a sweet sauce, but I go for sweet things. It keeps well in the fridge for a couple of weeks when I store it in pyrex and keep it on the bottom shelf.

White Bean Chicken Chili

I found this to be entirely too sweet and soupy. The only change I made was to use salsa verde rather than tomatillos. 4 people ate it, none of us liked it. It's too soupy and doesn't have that traditional flavor I was used to in white bean chili.
