Simple Scones

these were p[erfect. I have made a few differet recipies for scones and this is my new favorite. We had just picked fresh blueberries so I used 3/4 cup of those in place of the rasins. I did not freeze them before hand like someone else mentioned. I just added them to the end. They did not turn the socnes blue at all- my 3 and 5 yr old ate 2 each right out of the oven.

Zucchini Pasta II

This was really good! I did a few things different. I took 3 costco frozen chicken breasts and boiled them in a bit of water. Then I used the water the chicken boiled in and used that in place of chicken broth the recipie called for and also added 1/2 boullion cube. I did add the broth when I added the zuchinni since I had cubed them in large pieces and needed them to have some liquid to become tender. I ommited the red pepper and added a bit extra cream cheese to make the sauce thicker. Very good and will make again with all the zucchini growing in the garder!

Cookie in a Jar

very good- I am making them as gifts this year. I did not have rice cripies on hand so I used chocolate crispies- I did layer the ingrediants differently then suggested. I have read that white sugar should be at the bottom otherwise it seeps down throught the layers and will ruin the layer look. I did white sugar,flour, baking soda and baking powder, oatmeal, brown sugar, cholocate chips, white chips and crispies.

Creamy Mushroom Soup

I do not even like mushrooms but I loved this soup. I made it exactly like written. But i did add one garlic since we are garlic lovers. I did use all portabello. I chopped small pieces. made enough for 4 bowls as a start to dinner

Double Chocolate Cookies by EAGLE BRAND®

Very good- more like a cake like cookie but perfect for a chocolate lover. I did not have enough white chocolate so I added chocolate chips to make a full cup. I think next time I will grease the pan- it called for ungreased but was a little hard to remove from the pan and I have new non stick pans.

Roasted Swiss Chard with Feta

We got 2 giant leaves from a kids event at a local farm today. Not having the heart to toss them and wondering what they would taste like I deced to try this dish. 2 large leaves was enough of a side for a family of 4. My 7 and 9 yr old LOVED it. I was so excited they liked another green veggies. WIll be making this again for sure. Followed exactly.

Cheesy Baked Eggplant

Made this with the eggplant we got from the garden. Did not have fresh spinach on had so I used a package of frozen that I defrosted and drained. Was soooooo good.Will make this again and bring to the next potluck

Spinach and Rice (Spanakorizo)

Oh wow! I loved this- my husband is not a fan of spinach so he did not care for it much. I followed others users advice and did 3/4 cup rice and 3 cups of liquid. After a few minutes alot of the water seemed to absorb so I covered it since that is normally how I cook basmatiti rice and it just seemed like the right thing to do. It came out awesome and I will be making it again!

Bread Pudding II

Yummy- used stale bread and cut off crusts. Also used 1/2 white sugar and 1/4 brown sugar. Used 1 cup 1% milk and the 1 cup half and half.

Chocolate Cream Pudding

I will never by the boxed kind again. This was amazing- just the right fix for someone who wants a yummy chocolate dessert when a cookie will not stop the chocolate craving. Tastes like the batter for a fudge cake- I read the reviews and used the ingredients exactly However I did them in a different order- I melted the chocolate with the butter in a sauce pan and then slowly alternated and added the sugar mixture and 1 1/2 cups of milk. I had reserved 1/2 milk and had mixed that with the eggs yolks and then I slowly added that in while whisking. It thicken up and came out creamy with not lumps or gritty texture.

Best Lemonade Ever

easy to make and very good. Microwave the lemons for a minute until they feel warm as it will help get alot mopre juice out of the lemon.

I let it rise exactly the time it called for- not sure if it really doubled but is came out just like the kind i buy. be sure to cover when removed from the girll. As they cool the do toughen up

Chicken Pot Pie VIII

This was fantastic! My hubby had 3 helpings. I cooked 2 frozen Costco chicken breast in my crock pot with 5 cups water, 3 chicken bullions and 3 whole cloves of garlic. While it was cooking i steamed the potatoes and carrots and put in fridge. I think cooling the potatoes helped keep them from breaking up when it was all mixed with the sauce. The sauce is amazing. I actually used the broth from the crockpot- I only used 2 cups of broth and then one cup of water- it is important to taste here to judge how salty you like it. I actually cut the salt down to 1/2 tsp since the broth was salty enough. I used pilsbery pie crust and precooked it for 5 minutes on 400 with a wash of egg. I also put an egg wash on the top crust which gave it a beautiful shiney finish.

this was fantastic. It is light and can be served for breakfast, brunch or even dessert. It is not super sweet pastry so it is hard to stop at just one! I made this for Easter and one of the guys ate 9 of them for dessert. I found the dough in went from crumbly to mushy when made in the cuisinart- but it did come out perfect in the end. I used the filling suggested. Next time I may try other fillings for a change.
