Summer Potato Salad

Very good- nice light dressing without the heavy mayo taste. A bit different from your regualar potatoe salad from the store.

Yummy Honey Chicken Kabobs

Very tasty. I marinated overnight since I always find that meat marinated for 12 hours or more has more flavor. I used the Costco frozen chicken tenders. Defrosted slightly and then poured marinate over and left in frige overnight. Before putting on grill I threaded them on a kebob stick- no need tro cut tenders. I suggest making extra marniate or reserving some to brush on when grilling. I had tried to boil the left over marinate to use and the result was a lumpy mess with some cooked chicken fat. It worked fine as a marinade when I strained it off- but would have been easier if I had reserved some marinade or made extra.

Mimi's Slumgullion

This was a basic quick dinner for those busy nights. I used red potatoes and left the skin on and microwaved them first to cut down on the cooking time. I used less oil and turkey Kielbasa. I also added frozen peas just before turning off the heat and letting it sit for a few minutes covered before serving. I did not find it amazing- just a simple dinner or lunch.

Asparagus, Chicken and Penne Pasta

This was way rto spicy- If I make this again I would add 1/2 amount of red pepper. I also needed to add more olive Oil because it was too dry.

Pumpkin Crumb Cake

Very good- Kind of like a pumpkin pie with a crunchy top. Looks nice when cut into bars and put on a serving platter. I followed recipie exactly. Might add a bit of nutmeg next time to the pumpkin mixture.

Pumpkin Cranberry Bread

LOVE this bread. I used freesh pumpkin from our fall pumpkins. SOOOO good. The one thing I would say is you would want to sift the dry ingrediants or be sure to mix it up really well so there are no lumps of flour. I found that with the first batch the lumps of flour never blended into the bread while it cooked and I ended up with a few dry lumps of flour in the baked bread. I like to bake extra and slice it up to freeze individual pieces to be taken out when ever I just want a nibble to enjoy with a cup of coffee.

Paige's Feta Slaw

I was hesitant about the feta but it really makes a difference in the taste. Nice flavor and I think perfect for a potluck. I did do what others suggest- used 1/4 cup water, oil and rice vinegar. I also added a shredded carrot for color and added flavor.

Death by Chocolate

OUTSTANDING- this was so good! It makes a lot so be sure to have a crowd to serve it to! I used 2 packages of pudding mix as recommended. I had to make whip cream since I did not have the time to wait 5 hours for the cool whip to defrost. A keeper!

Grilled Fish Steaks

Very good marinade- simple enough since it is all ingrediants I normally have on hand. I used a fillet instead of a steak. My husband and 2 year old loved it.

Chicken Cashew Salad

Nice tangy/sweet flavor- I used 1/2 amount of brown sugar called for and only 2 chicken breasts. I found that any more sugar would of been to sweer. Need to eat with the cashews to appreciate the flavor- don't leave them out. I thought it was pretty good- a bit different but I do have other salads we like better. I think it is more of a side dish then a main dish because of the sweet flavor.

Baked Salmon Fillets Dijon

This is one of the best ways I have had Salmon. Normally we cook Salmon the grill where it can get dried out. This recipie was so moist and had just the right flavor. I did use 1/2 amount of butter called for on a 1 pound fillet- it was perfect- even my 2 year old gobbled it up- and she is picky!

Apple Scones

Mediterranean Black Olive Bread

Excellent bread. I did find the dough a bit sticky to work with and had to add more flour both times I kneaded it. My husband loved it- altought we both thought it needed a bit more olives. Next time I will add 3/4 cup of olives. Also, I did not really have the right kind of towel to flour and use for the bread so the last time I let it rise, I actually lined the pan with corn meal and let it rise in the pan I was going to cook it in.

Stuffed Pattypan Squash

This was excellent. My husband is not a big squash fan and he loved this. It was perfect as a side dish or a main dish for a simple lunch. Very tasty. I did cut back a bit on the amount of breadcrumbs used.

To Die For Blueberry Muffins

This was delicious! I followed the suggestions and added 1 tsp of vanilla to the batter. I also added some oats to the topping. I found the topping made the perfect amount. The first batch I used crisco to grease the pans and they were difficult to pop out. The second batch I used Pam and they came out of the muffin pan very easily. My friends are now all asking for this recipe. They are best the next day warmed up in the toaster oven with a bit of butter. This is a keeper.

Spinach Stuffed Chicken Breasts

Excellent - will serve at my next dinner party. Looks very impressive and only took a few minutes to prepare. I added about 2 tbl of minced onion and some garlic salt to the spinach mixture.

Crab Stuffed Flounder

This was delicious and very quick and easy to make. Perfect for those nights when you do not have alot of time to prepare dinner. Since Flounder is hard to find in the Northwest I used Sole for this dish. Before adding the mayo topping I did drain some of the fish juice out. I also used reduced fat mayo.

Yummy Eggnog Pie

I used a prebaked graham craker crust. I brushed the crust with egg white and popped it in the oven on 375 for 5 minutes. I let the crust cool before filling. This pie has a nice creamy texture- easy to make- friends raved about it. I left out the rum and it still tasted great!
