Slow-Cooker Chicken Tortilla Soup
Sooooo Soooo Sooooo Good! & way easy! My husband & i LOVED it. I used chicken broth in place of the water. Put frozen chicken tenderloins right in with all the other ingredients. Shredded chicken a few hours into cooking (on High). I melted cheese on top of reg tortilla chips to add on top instead of baking & cutting tortillas, etc etc. Also topped with Sour Cream & Sliced avocado that was salt & peppered. Definitely a keeper in our house. :)

Cauliflower-Cheese Soup
I wasn't sure about making this, but so glad I did. This soup is sooo sooo good! My husband, 18 month old & In-laws all loved it. Its a keeper. I didn't have celery or carrots on hand, but the soup still turned out great without. I doubled the cheese, which i'd definitely recommend. I also added a dash of garlic powder. Yum!
