Apple Butter Pumpkin Pie

I made this for thanksgiving this year for a change-up from the usual pumpkin pie. I had mixed reviews: my mom said it was "ok", but she LOVES plain old pumpkin pie. My husband and I loved it---the spices from the apple butter give it a real depth of flavor, and also lighten the texture a bit. I could eat this pie year round!

Cheese Garlic Biscuits II

FABULOUS! I made these tonight with homemade potato-cheese soup, and I think I ate more biscuits than I did soup! Very easy to make, and tons of flavor----what a winner!

Bubba's Jambalaya

This was my first attempt at making jambalaya. I was nervous to try one that seemed "simplified", but the list of ingredients wasn't overwhelming, so I gave it a try----and boy am I glad I did! It makes a huge batch, so my husband and I had TONS of leftovers, but my husband ate them all!!! (which says a lot for this recipe, because he doesn't like leftovers!) I think I would add a bit more cajun seasoning...only because we like things pretty spicy, and this was a bit bland for us. Also--I think next time I'll leave out the shrimp to make it more cost efficient.

Armenian Rice Pilaf

This rice was absolutely fabulous!! I served it with roast chicken, and it complimented the chicken so well. I've been looking for that "perfect rice pilaf" for quite some time, and this recipe really delivers! I used broken spaghetti, and next time I'm going to make sure to break them into smaller pieces, because my husband thought the texture mix was a bit strange, but the flavor was perfect!

Easy Indian Butter Chicken

This chicken was fabulous!! so easy to prepare, and very authentic tasting. I didn't have any tandoori seasoning, so I substitued 1 Tbs. curry powder. I'm giving this 4 stars instead of 5 only because I thought the amount of cayenne called for was a bit overpowering. (but my husband who loves HOT food, loved it!)

A Firefighter's Meatloaf

very declicious.....but mine ended up cracking a bit.....didn't completely hold together. I think I'll experiment with the egg/bread ratio for next time. but GREAT flavor!!!

Stuffed Mexican Peppers

These were absolutely fabulous!!! Stuffed peppers are my favorite thing to order at a mexican restaurant, and this recipe was my first attempt at making them at home.....so glad I did!!! I followed the recipe exactly---except that I had to use green peppers because my grocery store was out of red. They turned out perfect!

Sassy Chicken Enchilada Dip

This dip was spectacular!! The spices were perfect, and the fresh herbs really added that special something. I would definitely suggest not draining the tomatoes before adding....the liquid made the dip the perfect consistency. I took this to a party, and everyone LOVED it!! Thank you for this crowd-pleasing recipe!

Eclair Cake

This was sensational!! I made this for the first time for a friend's summer bbq......which I NEVER do, because I always like to try it at home first.....and it was a huge hit! I did as others suggested and melted the icing before pouring it over the cake---it ended up being the perfect chocolaty layer when I served it. Thank you for posting this recipe---it is my new potluck gem!!

Vegetarian Sweet and Sour Meatballs

Absolutely Fabulous! I'm trying to make one vegetarian meal a week....and this was one of the first ones I made. Both my husband and I LOVED it! The nutty flavor was delicious, and the texture was better than expected. This was so easy & great. Thank you for posting!

Brown and Wild Rice Salad

I recently made this for a large family gathering, and it was a hit!! Both the kids and the adults raved about it!! The only change I made was to use all wild rice (just because I love it so much!) The dressing is absolutely delicious, and I think is what makes it so amazing!

Apple Pie by Grandma Ople

This pie was sensational!! The caramel flavor of the apples really makes this pie something special. Only thing I did different was to toss the caramel with the apples before pouring into the crust. This is my new favorite apple pie!!!

Gnocchi Bake

absolutely fabulous!!! My husband raved and raved about this. He even suggested that I put this into our regular rotation. The only thing I did different was to add 1 tsp. of Italian seasoning with the sauce. The ghocchi turned out tender and perfect!!! Thank you so much for such a simple but fabulous recipe!

Mincemeat Crumb Bars

These are my new favorite Christmas cookie!!! I have been looking for a simplified mincemeat pie recipe since I attended a semester of college in London---the refectory at my school had mini-mincemeat pies every day for the entire month of December....and I NEVER tired of them! These bars come close in flavor, without all the hassle of making your own mincemeat, or bothering with a crust. I followed the recipe exactly, except I used an entire (27-oz) jar of mincemeat, and just zested a whole orange instead of measuring. Thank you so much for this recipe--it will definitely be a tradition in my family from now on!!!
