Grilled Tuna Steaks with Dill Sauce

Nice flavor variation when your favorite tuna recipe is getting stale. I substituted lime for lemon juice - not sure it matters. Next time I make this, I will leave out the sugar - really not needed.

Peach-a-Berry Pie

I tried the recommended changes mashing 1/3 of the berries ( I used blueberries with good results) with the sugar (I used Splenda), cinnamon and cornstarch rather than flour. I used frozen peaches (allowed to drain/thaw for about 2 hrs - still a little icy but worked fine) and fresh blueberries. Also used the egg wash with raw sugar top. Turned out great...not at all soupy, fresh but not too sweet; crust was gorgeous brown. I let it bake for 10 min; put a crust shield on it for 30 min and took it off for 5-10 min. Terrific recipe.

Sangria by the Pros

Doubled the recipe, used a value Australian Syrah, half peach brandy half VSOP. Served in large glass dispenser. Would say the frozen pitted cherries really added depth. Just terrific. Well balanced without being too sweet. I soaked the fruit for about 3 hrs in covered glass bowl to allow fruit to more fully submerge in the brandy. Truly a pro recipe.

Zucchini and Blue Cheese Side

Cooking instructions were spot on and ingredients simple but the flavors just didn't work for us. By the time the dish was served, having "rested" to allow the cheese to soften, the entire thing was pretty mushy. Won't make it again.

Sweet Potato Salmon Fish Cakes

Tastes great and although it takes quite a bit of prep, cakes freeze well and make quick microwave leftovers. Used only sweet potatoes and left skin on (remove large pieces of potato skin as needed when forming patties). Substitute
