Paneer Butter Masala

This recipe was really wonderful. I was trying to make this cheap and use ingredients I had on hand. Made my own garam masala using a recipe for the spice mix, blended fresh ginger and garlic to make paste and used sriracha hot sauce instead of red pepper paste. Also used fresh almonds stuck in a blender with some oil instead of the cashew paste and only milk (no half and half). My only issue is that it turned out very dull in color. I was expecting bright orange/red and it was sorta peach/pink. Maybe use tomato paste instead of sauce?

Fast and Easy Pancakes

Quick and easy, but mine turned out flat and WAY too chewy. They were edible, but I will try a different recipe in the future. May never make pancakes without a blender again, though. So easy and minimized cleanup since I could pour right from blender onto skillet.

Golden Yam Brownies

Followed the recipe and definitely had no problems with it staying moist. In fact- they were straight up SOGGY! Had to eat them with a fork, they were definitely not brownie-like in texture! Still give them a high score because they tasted AMAZING and I would totally make them again. Maybe I'll decrease the eggs like others did, add a little more flour and shred the yams finer to see if that helps.

Delicious Ham and Potato Soup

Delish! I'm pretty novice, but even the rue worked out for me. Hearty and delicious. I thought it needed a little cheese and I had none, so (yes, I am wayyyy ghetto...) I added a packet of cheese powder from some boxed mac'n'cheese and it turned out great!

Eggplant Parmesan II

I added a layer of ziti noodles and some thinly sliced baked chicken breast. This was sooo good. I usualy can't stand eggplant, but this was wonderful.

Fried Green Tomatoes

Amazing! Only problem was it only covered 12 slices, which for me was a tomato and a half. I would double the eggs at least and cut back a bit on the flour, maybe start with 1/3 cup. Also, a few tablespoons of cornmeal mixed with the saltines worked great. Wonderful coating, fried nicely and stuck to the tomatoes.

Best Buttercream Frosting

Easy to mess up. Stir the flour constanly or in seconds the flour will turn into a big yucky gob. If you let it cool too much and it is lumpy, throw it in a blender and it will be fine. Definitely a strong buttery taste.
