Gingerbread Men Cookies

I cook for some diabetics so I used Splenda brown sugar in this recipe. You are supposed to cut the splenda brown sugar in half for recipes that call for regular brown sugar but I used 1/2 cup instead of 3/4 cup and they came out great. I cooked them just about 8 minutes for chewy cookies and they were a big hit. They aren't the spicy gingerbread cookies though.

Spicy Pumpkin Chili

This pumpkin chilli is delicious! I have never made a pumpkin chilli before so I didn't want to stray too far from the original recipe. I didn't use the ground beef and I added cayenne pepper. I think this is a recipe you could change up a lot and it would still be good. I would definitely reccomend using the fire roasted tomatoes that the recipe calls for because those worked really well in this.

Vegetarian Stuffing

I love this stuffing. It was very flavorful. I used a plain cornbread for this. I didn't use the mushrooms, but I used everything else and I really liked the pecans and rice. I wouldn't leave anything out except maybe the mushrooms. Easy to make.

Classic Minestrone

I really love this soup! I was trying to make something vegetarian that was similar to a minestrone at my fave restaurant. This was as good. I used Italian seasoning and chickpeas instead of cannellini beans. I also used wheat pasta. It was very tasty.

Vegetarian Tortilla Soup

I love this recipe. I had never had tortilla soup before and I decided to try this out. It was great. I changed it up quite a bit, though. Instead of frozen vegetables, I used a green bell, a yellow pepper, a red pepper, and I added some cilantro and black beans. This is easy to make, and it calls for a lot of ingredients that i usually keep in the fridge anyway. I noticed some people say that it was too spicy with the three cans of green chiles, but this works for me, so if you like it spicy I'd say go for it.
