Herbed Chicken, Vegetable and Rice Skillet

Reviewed: May 2, 2011
This is pretty good. I used 3/4 cup basmati rice instead of instant and same amount of water as the recipe. I fried up the rice to give it a slight golden color then I added the water and cooked for 5 minutes uncovered before adding the veggies and chicken.I cooked it covered and on low heat for 15 minutes to get the rice cooked through .

Macaroni and Peppers in White Sauce

Reviewed: Apr. 18, 2011
This is a nice recipe where you can play with the type of cheese you have in the house. I used feta , herbed creamy goat cheese and a bit of old cheddar and it was pretty tasty. Plus I added some chicken breast and garlic to the dish.Kids loved it.

Hudson's Baked Tilapia with Dill Sauce

Reviewed: Apr. 14, 2011
The cajun flavour was nice on this fish but I used homemade cajun/creole spice from this site. The dill sauce was so tasty you could almost use it to dip soe veggies :).

Hearty Vegan Slow-Cooker Chili

Reviewed: Mar. 24, 2011
This is not your traditional chili but it is a good chili nonetheless . I did not have zucchini and squash so i replaced those with diced carrots and celery.Worked out nice and replaced the tomato sauce with vegetable cocktail like one reviewer did and it was also good.

Cake Mixes from Scratch and Variations

Reviewed: Jan. 27, 2011
This cake turned out super moist and fluffy (I made 2 of them). They were not dense at all. I find creaming the butter and sugar first easier them just throwing the first 5 ingredients together but other then that, the cake tastes great. The trick is to not over mix the batter.

Grandma Jeanette's Amazing German Red Cabbage

Reviewed: Dec. 10, 2010
Ok this is so close to tasting like the red cabbage at our friend's father's german restaurant that I was super happy I found one that made me go "Mmmm" with every bite like his. Thanks a bunch and this goes into my recipe box for sure.

Ham and Onion Pie

Reviewed: Nov. 5, 2010
The filling is yummy but I must say I did not use the recipe's pie crust because I love emeril's savory pie crust recipe. And in doing so, the pie just had that WOW factor in my mouth.

Chewy Brownies

Reviewed: Oct. 29, 2010
Ok I have no clue why some people say they are too oily and that they leave oil residue on your hands because I did a half batch in an 11 by 7 inch brownie pan and they turned out crunchie on the outside and moist on the inside. Not even a speck of oil was left on my hand when I ate them. Only different thing I did was do half brown sugar and half white suger and add choco chips instead of nuts.

Sausages in Onion Gravy

Reviewed: Oct. 23, 2010
Not a bad recipe for a quick weeknight supper or even a super busy weekend night. I used honey garlic sausages and it actually worked well with the added 2 red peppers in this recipe. Also i reversed the steps by mistake but that wasn't a major disaster. I actually boiled my sausages and then fried them and put aside. Then made the gravy with the pan dripping and put that aside.Fried up the onion and peppers and then added the sausages and sauce and just warmed everything up.Served with boiled nugget potatoes.

Pork Chops and Dirty Rice

Reviewed: Oct. 18, 2010
Rice tasty but my thick pork chops were so dry even with 45 minutes of baking with lid on and at a lower temperature . Needs a gravy to eat it and definatly less time at baking.Maybe 25 minutes would have sufficed. Sorry won't be saving this recipe

Beef Stew I

Reviewed: Oct. 2, 2010
This recipe gets 3 stars because as written there is too much veggies to water and it did not thicken (with original amount of water) in my crock pot. So I decided to play with it ,and found with 2 more cups of water and some cornstarch to thicken it this became more of a stew that we are used too.Next time I will add some garlic and a bit more rosemary.

Mushy Peas I

Reviewed: Oct. 1, 2010
Very tasty recipe. Kids liked it very much but hubby was neutral (he has to eat it anyways :P). Only different thing I did was boil 1/2 a small onion with the peas and then used my hand blender to puree everything. Oh and I used homo milk since that is all I had on hand and it worked nice.

Biscuit Baking Mix

Reviewed: Sep. 23, 2010
Worked out pretty good as a substitute for bisquick and was tasty.Only difference I did was use butter instead of shortening (that's what I had on hand) and cut the recipe back to 3 servings since I did not want to waste good ingredients if it did not work out.

Chicken Papadoris

Reviewed: Sep. 15, 2010
This chicken dish is pretty tasty and fast for a busy week night meal. The only thing i did different from the recipe was add 1/2 cup green curry sauce since that is what I had leftover from another curry recipe and wanted to use it up and omitted the cumin for lack of it.It worked great in this recipe.Served with some garlic-chili jasmine rice with peas and some orange cauliflower with cheese sauce.

Grilled Sweet Potatoes

Reviewed: Aug. 16, 2010
Not a bad recipe at all..and the cayenne you can omit it too or add more if you like. And I tried it with added diced potatoes (didn't have enough yams) and that worked out quite nicely too.

Fiery Pork Skewers

Reviewed: Aug. 3, 2010
Had a bit of doubt that I would really like it cause of the teriyaki sauce smell being strong but it was actually really great with pork tenderloin when marinating it for 6 hrs. Had to make another batch of the sauce to baste the kabob since the original recipe left me with hardly any. I also added 1/2 tsp garlic powder to the marinade.

Really good recipe but I did use a mortar and pestle to crush the fennel seeds and added 1 more Tbsp of balsamic and left out the orange juice.

Nacho Dip I

Reviewed: Jul. 23, 2010
I rated 4 star with some of my additions otherwise I think this recipe wold be a bit boring. Added only 1 tablespoon of BILL ECHOLS's taco seasoning and 1 1/2 tsp onion powder to the cheese mixture and as extra layers to the dish, I added 1 lb of ground beef cooked with onions and a burrito seasoning mix and 1 each red and yellow pepper diced very small. Very nice to eat with the family on movie nights.

for a quick meal it is pretty tasty.Only thing i did differently was add some diced red pepper and more milk in the canned soup and let it simmer with the meat. I sliced my thick pork chops into not too thick strips and served with some couscous.Husband loved it.

Sweet and Sour Meatballs II

Reviewed: May 12, 2010
Ok it is a good basic recipe but it needs a bit of veggies in it . So I added some green pepper chunks, some carrot strips and 1 small onion.Let it simmer in the sauce with the store bought italian meatballs for an hour and voila. That gave it some extra flavour and added veggies to your meal.
