Easy Baked Mac-N-Cheese

Reviewed: Mar. 11, 2013
Very good and kids liked it even with spinach added to it and using mediterannean flavoured bread crumbs. I made my own alfredo sauce as well so it was flavoured like we like it and only baked it for 20 minutes bt next time 15 mins should be sufficient since the cheese darked too much.

Baked Salmon II

Reviewed: Nov. 14, 2012
Very tasty recipe that you can modify the herbs to your liking. I added dried dill on top of the other herbs and i reduced the salt(Sea salt) to 3/4 tsp . I marinated 4 frozen wild salmon fillets for 3 hrs And baked them in the oven on a bed of fennel, onion and zucchini. It was superb and my young kids enjoyed it :-)

Pumpkin Muffins II

Reviewed: Oct. 31, 2012
Second time making these and they were again delicious. The first time I did it as is ,this time around, I made them "healthier" by replacing oil with homemade unsweetened apple sauce but still added a table spoon of omega 3 veggie oil.I reduced sugar to 1 cup and added 1/2 cup craisins. End result was delicious but I think I will keep oil to 1/3 cup and the apple sauce to a 1/3 cup since I found the mini muffin paper cups tended to stick to the baked muffins when the oil wasn't used. Yielded 48 mini muffins .Thanks for the recipe.

Hungarian Mushroom Soup

Reviewed: Sep. 18, 2012
We loved it. Had 1/4 cup heavy cream to use up so i topped the rest with milk to get the cup needed. Also added 1 chicken breast chopped small but even without it , the soup would have tasted devine.

Alsatian Pork and Sauerkraut

Reviewed: Sep. 6, 2012
Very tasty served with rye bread with butter on the side( great to soak up the juices). I replaced the juniper berries with 1.5 tsp of caraway seeds and used ground cloves , ground malabar black pepper and dried parsley as that is what I had.

Cape Breton Blueberry Grunt

Reviewed: Jun. 22, 2012
i'm rating this even when I forgot to add the sugar to the blueberries. Our plump BC blueberries were so flavourful that the accidental omition worked out anyways. Super tasty with yummy fresh blueberries ( might need sugar with frozen store bought ones though).

Hungarian Flourless Hazelnut Cake

Reviewed: Mar. 30, 2012
cake worked out wonderflly on my first try and yes adding the nuts in the yolk mixture makes it super thick and hard to whip with a weak mixer. My kitchenaid pro550 had no issues with this . And then I folded the egg whites a bit at a time ( thirds) with a spatula . Raised beautifully too. Will be filling it tomorrow with some nutella chocolate frosting and serving it with some chantilly cream.

Chicken Chimi in the Oven

Reviewed: Jan. 10, 2012
Very good recipe and very simple for a weeknight. If you like to let your meat mixture sit a few hours before making your wraps then go for it but I thought it was good the way it was. We have chili powder that is not spicy, so we had no issues with heat other then what was in the medium salsa.

Tomato Barley Soup

Reviewed: Jan. 2, 2012
I give this soup a 4 only because without seasonings (sea salt, parsley and a tad of basil) it was kinna bland. We also blended our soup since it was easier for little kids to eat and we love the smooth texture. Thumbs up from the kids

Chicken Pesto a la Lisa

Reviewed: Oct. 6, 2011
Very good recipe. When it was time to eat, I did mix all the sauce in with my pasta and served with a vegetable salad on the side. Plus, I added half the feta cheese into the sauce near the end to melt it a little and then sprinkled the other half when serving the dish.N.B: Some Fetas are saltier then others so if you want this recipe less salty use less feta or buy a feta that has low sodium in the brine.

Southwest Chicken Pie

Reviewed: Oct. 4, 2011
really good recipe especially if you doctor it with the season you like. The ones she mentioned are fine but when you add some chili powder and a touch of cajun seasoning then you have a great combo. But i did use my own savory pie crust recipe and not store bought crusts.

Owen's Peachy Pig Out

Reviewed: Sep. 23, 2011
I give this a 4 star only because i modfied the cooking method only. Microwave cooking is not our thing so i browned the pork tenderloin on the stove then removed the pork and sauteed the sliced onions. While that was sauteing,I made the sauce in the sauce pan. Then returned the meat in the casserole dish where the onions had finished caramelizing. I poured the sauce (I had a cup of peach syrup to use up and we love our gravies so why not make more) on top of the meat and covered it and baked it for 40 minutes at 350F. Served it with stove top fried diced potatoes and the canned peaches uncooked.

Dannon Sunshine Smoothie

Reviewed: May 8, 2011
This was good but not that sweet. It was fine for us but next time I might add a bit more mango cause it was definatly not as orangy as the picture and maybe a bit of honey for sweetness. Also the recipe as it is now, makes more then 2 servings unless you serve really huge glasses. We had a full 48oz blender jug when everything was combined and that was plenty for 4 (with extra servings left)

Herbed Chicken, Vegetable and Rice Skillet

Reviewed: May 2, 2011
This is pretty good. I used 3/4 cup basmati rice instead of instant and same amount of water as the recipe. I fried up the rice to give it a slight golden color then I added the water and cooked for 5 minutes uncovered before adding the veggies and chicken.I cooked it covered and on low heat for 15 minutes to get the rice cooked through .

Macaroni and Peppers in White Sauce

This is a nice recipe where you can play with the type of cheese you have in the house. I used feta , herbed creamy goat cheese and a bit of old cheddar and it was pretty tasty. Plus I added some chicken breast and garlic to the dish.Kids loved it.
